We are already in our first week of summer. It’s been great so far! I have been letting my kids help plan lunches and dinners. They also have been assisting me in the kitchen. Yesterday, we came up with this Cantaloupe Berry Salad (which was gone by last night). Use fresh cantaloupe, your favorite berries and a hint of lime juice and fresh mint. It’s light, refreshing and makes a healthy dessert or after pool snack. Happy Wednesday!

 

Melon-Arugula Salad

We should all by making the most of melons before their peak season and summer are over. This super easy Melon-Arugula Salad makes a great starter salad or even main dish salad topped with grilled chicken or shrimp. My kids have really become arugula fans (which I love). If you’re introducing your kids to new vegetables and lettuces, add an ingredient in them that they really like. Melon-Arugula Salad is the perfect example. Use any of your favorite store-bought salad dressings or add balsamic vinegar and olive oil like I did above. Only Five Ingredients: Healthy Salmon Salad

We eat a good bit of canned Alaskan salmon at my house. For those of you who have never tried it or are wrinkling your forehead as you read, give it a try. I particularly like “Pure Alaska Salmon” (their Pure Alaska’s “ReadHead” wild sockeye salmon and “Think Pink” pink salmon). Both are similar nutritional powerhouses since they are high in protein, calcium, Vitamin D and one of the richest sources of Omega-3 fatty acids. This recipe for Healthy Salmon Salad is too easy and only five ingredients. I love combining the sweet, tartness of raspberry balsamic vinegar with fresh dill. Enjoy this for lunch over a bed of arugula or mixed greens, or even for dinner on a warm night with pasta salad and fresh asparagus.

Easy Grilled Italian Romaine Salad

Perfect for a busy weeknight or Sunday afternoon, this Easy Grilled Romaine Salad is so flavorful. Use a store-bought balsamic vinaigrette to marinate the vegetables, and then grill them to bring out their flavor even more. Gorgonzola tastes great sprinkled on top, but you may substitute feta, Parmesan or goat cheese if you wish. Feel free to add grilled chicken, steak or shrimp for a main-dish salad. Serve with some crusty bread and olive oil, and dinner is ready.
