It has been so warm here the past few weeks where 97 degrees is the new norm. I made this chilling, refreshing Watermelon Grapefruit Slushie which was a home run. My kids were skeptical about me adding the grapefruit, but they ended up loving it and asking me to make more. This recipe is healthy, detoxing, and refreshing. It is perfect to make after a tough workout or as a lunchtime or dinnertime dessert. With 98 calories per serving, this recipe is high in B6, Vitamin C, Vitamin A, Potassium and Manganese, so sip and enjoy!

Fresh Cherry Cinnamon Rolls

I had some leftover fresh Northwest Cherries and wanted to make something I don’t ordinarily make. I thought, cherry cinnamon rolls, let’s do it! I used frozen bread dough to simplify things, fresh cherries, and these came out incredible! My husband, who says he doesn’t like cherries (who doesn’t like cherries) loved these, and my kids said, “When are you making them again?” These Fresh Cherry Cinnamon Rolls are the perfect recipe for a summertime brunch or breakfast! My sister is making them for a wedding shower next week. Enjoy them while fresh cherries are at their peak!

Just in time for Father’s Day, July 4th and summer picnics and get-togethers, this Healthy Corn Salad is a combination of some of my favorite ingredients. I always tell my kids that summer corn tastes just like candy. This makes the perfect summer side dish served with chicken, steaks, pork and seafood. Corn is also very healthy as it’s a rich source of vitamins A, B, E and many minerals. Its high fiber content is good for digestion. The antioxidants present in corn act as a anti-carcinogen agents and can help prevent Alzheimer’s disease. Enjoy all summer long and if you’re making this in the winter, feel free to use frozen corn. Just thaw it, bring to room temperature and proceed with the instructions above.

I have had the most incredible cherries this week Washington State, plump and so sweet. I decided to make these Fish Tacos with Cherry Salsa, which were a huge hit at my house. In under 30 minutes, you’ll have your family or guests raving over these! This summer be sure to keep a plentiful supply of Northwest fresh sweet cherries on hand for a nutrition-rich snack.  Place a handful of cherries in sealable plastic bags in the refrigerator for quick grab-and-go snacks or to take for lunch for dessert.

These are so incredibly healthy too. Researchers found that consuming about 45 cherries daily may significantly decrease circulating concentrations of specific inflammatory biomarkers in the body. The research study, published in The Journal of Nutrition, was conducted at the USDA-ARS Western Human Nutrition Research Center. Because of the link between inflammatory markers and some chronic diseases, the changes in the identified biomarkers suggest that consuming cherries may reduce risk or modify the severity of diseases such as heart disease and diabetes. Whether eaten out of hand or added to your favorite recipes, remember the season for Northwest fresh sweet cherries is short so enjoy them now or you’ll have to wait until next year!

We used vanilla Greek yogurt, fresh strawberries and honey to create an amazing tasting frozen fruit popsicle that has 16 grams of protein. After I wrote my cookbook, 400 Best Sandwiches Recipes, I was often asked in television and radio interviews which sandwich recipe was my favorite? I can’t tell you how difficult it is to choose between 400 different sandwich recipes. This California Sandwich is in my top 5 favorites. I love the simplicity of the goat cheese spread combined with zucchini, squash, tomatoes, avocados and sprouts on this multigrain bread. If you can’t find alfalfa sprouts, I love using kale or broccoli sprouts, which are also widely available in grocery stories. This sandwich is perfect for the summertime for lunch or a light dinner served with a fresh corn salad and fruit. I promise it is as good as it looks!

I received an ice cream maker for one of my wedding presents, and the kids and I are obsessed with it! My husband’s mom makes homemade ice cream for every holiday, so I had to step up my non ice cream making abilities  and learn the craft. This Oreo Ice Cream recipe is one of my first creations. This recipe is so easy with only 10 minutes of preparation time, and it can be made several days in advance. Substitute your favorite chocolate chip cookie or candy bars for the Oreos if you wish. I received so many bottles of wine for our couple’s shower and wedding that I decided to get creative in the kitchen. Since warmer weather is arriving, I created a sangria popsicle (I love sangrias) to create these Wine Sangria Popsicles. I used VOGA Italia white wine and organic peach juice. If you can’t find peach juice or fresh peaches yet to juice your own, feel free to substitute orange or white grape peach juice. These are so easy and perfect to serve at a spring or summer cocktail party, couple’s shower, Mother’s Day brunch or even a spring or summertime cookout or just hanging by the pool.
