Layered Berry Smoothie

Layered smoothies take extra time, but they are so worth it! My family has been working out a ton this weekend (tennis tournament, hiking, swimming, running and golf) so we decided to make these Layered Berry Smoothie just in time for the Memorial Day holiday. The best way to make these, so the flavors don’t run into each other is to prepare each flavor at a time, and put each flavor in the freezer until ready to layer.

These layered smoothies are so healthy with fresh strawberries, blueberries and bananas. They are also easy to prepare, taste fresh, are filling and are good for you. Feel free to use your favorite milk, and if you can’t have dairy, feel free to substitute coconut water.

Fresh Strawberry Bread

Fresh Stawberry Bread

I know it’s Passover so forgive me if you’re celebrating. I made this Fresh Strawberry Bread last week, and I could not wait to share the recipe. All you need is one big bowl–no mixer is needed. Combine all of the ingredients, except for the sliced strawberries in one bowl; mix and then fold the strawberries in gently. Even though this quick bread has bananas, it does not taste like banana bread when it’s done. The combination of the mashed bananas and nonfat plain Greek yogurt create an amazing moist texture and fantastic flavor.

Strawberries are now at their peak, and you can find them on sale at many groceries. One cup of strawberries has 50 calories, and they are packed with health benefits such as boosting your immune system, promoting eye and heart health, helping fight cancer, wrinkles, high cholesterol and so much more. Enjoy this recipe this spring and summer for breakfast, a snack or even dessert. My kids and husband went wild for us, so next time I will be making two!

Antioxidant Shooters

Antioxidant Shooters

If this recipe for Antioxidant Shooters has caught your eye, I have a feeling you are aware that pomegranate juice, strawberries and blueberries are filled with antioxidants. With the addition of beets, this recipe is SUPER high in antioxidants. If you don’t have time to cook beets, you can often find them on the salad bar at a high end or gourmet grocery store. What is interesting about beets is not the fact that they are rich in antioxidants, but the unusual mix of antioxidants that they contain. Beets have unique antioxidants since they get their red color primarily from betalain antioxidant pigments (and not primarily from anthocyanins). This combined with being a very good source of the antioxidant manganese and vitamin C, provides antioxidant support in a different way than other antioxidant-rich vegetables.

Have you heard the term but wonder why antioxidants are important? Antioxidants offer a number of health benefits and can help possibly prevent diseases, ranging from cancer to Alzheimer’s. Also, more and more information suggests that chronic inflammation is the root cause of many of these same diseases, and these ingredients are ALSO high anti-inflammatory foods. These Antioxidant Shooters are so good, so healthy and easy to make for a morning or afternoon pick-me-up of liquid health.

Berry Sparkle Cocktail

Berry Sparkle

What a week! I came home from Italy to two days of tornadoes through Alabama (luckily we are safe and unharmed). It’s almost May and time to welcome new blooms and fresh sunshine with refreshing seasonal cocktails that capture the essence of Spring in every sip. This Berry Sparkle Cocktail is a perfect way to make a toast to spring (and good weather ahead). It’s ideal for Mother’s Day, showers and even graduation parties. Start with your favorite berries and freshly chopped mint. Use Licor 43 and champagne or Prosecco to top it off. Cheers 🙂

Easy Strawberry Smoothie with Greek Yogurt

If you’re looking for a recipe that is gluten-free and high in protein try this easy Strawberry Smoothie with Greek Yogurt. The typical brand of vanilla Greek yogurt (I used Chobani) has 120 calories, 13 grams of protein, 16 carbohydrates and no fat. This recipe makes a great quick breakfast in the morning, before or after workout pick-me-up or after school healthy snack. It would be great for Valentine’s morning too!  If you don’t have fresh strawberries, you can always use frozen. Frozen fruits and vegetables are picked at their peak and flash frozen so they have the same nutritional content. See more recipes and ideas using frozen fruits, vegetables and dairy items at Easy Home Meals. Enjoy and have a great week ahead!

Passover Berry Crisp

It seems bizarre to showcase Passover and Easter recipes already, but these holidays come early this year, just a few weeks away. I know people start planning their Passover menus ahead of time, and Passover desserts are always a challenge. Last year, I made this Passover Berry Crisp, and it came out great. I ended up making it several times, and I am positive it will be on this year’s list. Feel free to substitute 5 to 51/2 cups of apples or your favorite fruit for the berries. Happy spring holidays!
