It’s only 3 weeks until the Super Bowl, and I am already getting emails, direct Facebook, Twitter, Instagram messages and texts for recipe ideas. This Steak Nacho Recipe should be on your list for sure! I made this last week for my kids and husband, and they LOVED it! It’s really easy, fun to make and so flavorful. I will be making several versions of these nachos with ribeye steaks in one, grilled chicken in another, and a third with just black beans (for my vegetarian friends). Also, if you’re looking for a great grilled steak rub, try the spices listed above because the steaks by themselves are incredibly tasty too. What’s hot at Fleming’s? Fleming’s Prime Steakhouse & Wine Bar has recently launched its new menu nationwide featuring dry-aged steaks, bold cuts and enticing Steak Companions. The restaurant debuted dry aging preparation for richer, bolder flavor on select cuts and delicious steak “companions” and sauces for an elevated taste experience that goes above and beyond the classic steak. I went to try them out and OMG amazing!

“We’ve crafted an indulgent menu with a spotlight on steak, but take each cut to the next level,” said Chef Russell Skall, Fleming’s Corporate Executive Chef. “We’re introducing preparation techniques like dry aging our Prime beef on popular cuts, to serving each steak with surprising flavor profiles – we’ve got something for the purists and the adventurers.” Some of the new items and preparation techniques include:

  • Steak Companions:
    • Truffled Poached Lobster with bernaise sauce and caviar
    • Diablo Shrimp baked with a spiced barbeque butter sauce
    • King Crab with Herb Butter simmered with fresh herbs and garlic and topped with caviar
    • Flavor Trio with three steak spreads –  gorgonzola and mascarpone brulée, sweet onion bacon jam and cabernet mustard
  • Varied Preparation Techniques:
    • Dry Aged – Cuts aged a minimum of 21 days allowing a richer, bolder flavor with a distinctive nutty note (available for the Prime New York Strip and the Prime Dry Aged Ribeye);
    • Wet Aged  – Cuts aged a minimum of 21 days providing a juicy, flavorful and savory bite (available for Prime Bone-In, New York Strip, Prime Bone-In Ribeye and Filet Mignon);

Easy Grilling: Jamaican Spiced Flank Steak

I do a lot of grilling in the summer, but honestly, I am grilling year-round. Every year, I work on so many grilling recipe projects for food clients, magazines and cookbooks, and my kids love almost anything that is cooked on the grill. Flank steak is always on the top of my list, and I love this Jamaican Flank Steak recipe. The marinade is really fabulous, made with orange juice, lime juice, fresh ginger, brown sugar, pepper and cinnamon. One of my friends tried it, and she told me she only cooks flank steak this way now. Serve this with a tossed salad, fresh fruit or grilled asparagus, and dinner is fresh, healthy and simple.

Easy and Healthy Beef and Broccoli

My three kids love Asian flavors. This easy and healthy Beef and Broccoli recipe is a hit every time that I make it. It’s so quick to prepare using very simple-to-find ingredients. I love using skirt steak as it’s very tender after being simply marinated with honey, fresh ginger, reduced-sodium soy sauce, sesame oil, garlic and red pepper flakes. Just marinate the steak for an hour or overnight, and dinner is on the table in less than 30 minutes. This dish is perfect for busy weeknights. I served with rice and some edamame beans, and everyone loved it (and was full).

Back to School Main Dish: Balsamic-Soy Flank Steak

My kids love when I make flank steak for dinner. Since school starts back this week, I thought I would start off the week right by sharing this recipe for Balsamic-Soy Flank Steak which is so simple and quick. I used McCormick’s Montreal Seasoning for the spices which is a blend of peppers garlic and spices (part of their Grill Mates collection).


Weeknight Summer Dinner in a Pinch: Steak Fajita Salad

Since summer began, things seem (and are) busier than ever. Trying to work at home with 3 kids is always a challenge. Some days, dinnertime becomes a last minute thought. This recipe for Steak Fajita Salad is one of my “in a pinch” recipes. My kids love these, and they wrap the steak and vegetables in flour tortillas. I serve mine over lettuce (trying to skip the carbs). I dollop mine with nonfat Greek yogurt for some extra protein and a great substitute for sour cream.

Note: for the Fajitas seasoning, I used McCormick.

Low-Fat Sandwich Night: Dijon Peppercorn Wraps

If you’re like me, and you like to serve sandwiches for dinner, you’ll love these Dijon Peppercorn Wraps. I developed this recipe for Laura’s Lean Beef and with 223 calories, 7.3 grams of fat and 19 grams of protein, you can feel great eating these for dinner. Feel free to substitute chicken, but steak is great with the homemade Dijon sauce. This recipe is perfect if you have a hectic afternoon schedule (that’s me everyday with 3 kids).
