One Pot Chicken and Eggplant

One Pot Chicken and Eggplant

Sorry I have not posted in a while. My website was hacked, so we are still working on getting everything straight and regrouped. My daughter, Leigh, said, “Who would want to hack a food/travel blog?” That is a really good question. Anyway, if you follow me on Facebook, Twitter or Instagram, you will know I have been in Jackson Hole, Missouri and Atlanta in the past week and a half. All of this travel makes want easy, healthy dinner options such as this One Pot Chicken and Eggplant recipe which my family loved! Serve it over fresh spinach, pasta, rice quinoa for a one dish meal. I love that you cook the eggplant and make the sauce and then puree it–this is a great way to get your kids to eat more eggplant. Enjoy this for an easy weeknight or weekend main dish. Serve with a salad and dinner is done!

Curried Sweet Potato Soup

Curried Sweet Potato Soup

I have been working with root vegetables for a big client recipe testing project this week, and I was so excited to make Curried Sweet Potato Soup recipe. This warm, healthy soup with sweet potatoes is ideal for the changing temperatures. It’s also super healthy and made with detoxifying ingredients such as cinnamon, curry powder, and even spinach. If you’re short on time, this easy soup can be whipped up with basic ingredients found in the pantry. Pair it with a salad for a wonderful weeknight meal. Thanks to Michele Periquet and Firouze Zeroual‘s for introducing me to this great recipe!

Honeydew Cucumber Green Smoothie

If you like green smoothies, you love this one! Last weekend, I had the amazing opportunity to visit Barnsley Resort in Georgia. I recommend it for so many reasons! Enter the 19th-century Downing-style village that features cottages with porch swings or rocking chairs, amazing golf course, hiking, canoeing, horseback riding, clay shooting, pool, spa tennis, and so much more. Be spoiled by supreme Southern service, incredible farm-to-table dining, breathtaking grounds and something unexpected at every turn. Barnsley’s new Chef, Adam Hayes, is one you’ll definitely want to keep your eye own. His palate and passion is contagious (and he’s a cutie too). I had this Honeydew Cucumber Smoothie one morning for breakfast, and it was fabulous! I didn’t get the recipe, but I know it had honeydew, cucumber, and spinach. SO here’s my variation. Feel free to add whey protein powder if you like! Enjoy and happy July 4th week!

Spinach Mango Protein Shooters

My 3 kids and I have been really into smoothies lately, and yes, they honestly do drink “green” variations. I made these Spinach Mango Protein Shooters for breakfast, and they were quite the hit!  I ended up making this again after a tough “Insanity” workout yesterday, and it was an amazing pick-me-up. It’s perfect filled with spinach, mango and a protein boost from Greek yogurt. I love using frozen mango and don’t forget: Frozen fruits and vegetables are just as healthy as fresh. They are actually picked at their peak and flash-frozen (see more on this at Easy Home Meals). I used my newest kitchen equipment addition for this recipe: The Nutribullet, which makes it so easy to make a smoothie for one (or for small amounts). Enjoy!

Travel Tuesday: Spinach Quinoa from Westside Market NYC

This recipe from comes from the Westside Market NYC, a top market in New York, which has been in business for almost 50 years. Their market has seen a rise in the number of people purchasing quinoa at their four locations. Quinoa’s health benefits include it being a gluten free grain, boosting brain power and having high levels of iron and calcium. Maria Zoitas, wife of Westside Market’s founder John Zoitas, the creator of the “made by Maria” line of prepared foods at the market. Here is one of Maria’s healthy creations.

About Westside Market NYC:

Established in 1965, Westside Market NYC has been deeply engrained in the fabric of Manhattan’s Upper Westside life. A rare find in the food market business, Westside Market NYC is family owned and operated in the truest sense. Born and raised on a farm in Roupakia, a village on the island of Lefkada, Greece, John Zoitas arrived in the U.S. from Greece more than 45 years ago. He brought with him a love of fresh-grown produce, authentic cooking, and a steadfast commitment to service and quality. Each of our locations enjoys a remarkably loyal following, which is no surprise; it’s a direct result of the fact that the Zoitas family takes great pride in every aspect of their business. Under the tutelage of his father John, George Zoitas has taken the reigns of Westside Market NYC and made it into the premier market it is today. Sausage and Fresh Spinach Lasagna

When I think of comfort food this time of year, I think lasagna. My 3 kids love it, and it sure makes my life easier when I prepare a one-dish meal. This Sausage and Fresh Spinach Lasagna recipe is one of my favorites because it combines all of my favorite ingredients. I lightened this recipe using part-skim ricotta, egg white and less cheese, and it came out fantastic. Serve with a salad or side vegetable, and that’s all you’ll need.
