Easy, Healthy Appetizer or Main-dish Recipe: Pork Lettuce Wraps

This recipe was featured on NBC 13 Daytime Alabama for I Can’t Believe It’s Not Butter this week. My kids love lettuce wraps so this is perfect to serve at my house and only 3.5 grams of fat. It’s also very economical, only $6.93 for the recipe or $1.73 per serving. Feel free to substitute steak, chicken or shrimp for the pork in this recipe.

Low Carb and Delicious: Mongolian Flank Steak

I used to love Mongolian Beef when I was kid when my parents used to take me to our favorite Chinese restaurant. I haven’t had it in a while, so I tried to replicate the dish with flank steak and make it as low-carb and low-fat as possible. I served mine with broccoli and had some rice for the kids, and everyone was happy. Easy and Low Carb: Moo Shu Chicken

One of my favorite dishes at Asian restaurants is Moo Shu Chicken so I decided to try my hand at creating a recipe that would be easy, flavorful and low-fat. This recipe came out great and even my kids loved it! I topped mine with peanuts and ate it without rice or tortillas to cut down on the carbs at night. It’s very filling and delicious.
