I love twitter for so many reasons. To start, I have made so many fabulous friends. I truly make new friends daily, but I always come across the latest and great information on news, health, fitness, recipes, social media and more. I was so excited when Regan Jones from The Professional Palate posted a recipe for Blueberry Cobbler Bars inspired by her grandfather. I know Regan from her days at Cooking Light and Weight Watchers magazines when I was working at Southern Living. When I saw her tweet about her recipe, I told her I must try it with peaches. Well, it worked beautifully. These Peach Cobbler Bars are not only so easy, but out of this world.
I do a lot of grilling in the summer, but honestly, I am grilling year-round. Every year, I work on so many grilling recipe projects for food clients, magazines and cookbooks, and my kids love almost anything that is cooked on the grill. Flank steak is always on the top of my list, and I love this Jamaican Flank Steak recipe. The marinade is really fabulous, made with orange juice, lime juice, fresh ginger, brown sugar, pepper and cinnamon. One of my friends tried it, and she told me she only cooks flank steak this way now. Serve this with a tossed salad, fresh fruit or grilled asparagus, and dinner is fresh, healthy and simple.
Living in Alabama does have its perks, especially living near easy access to fresh Chilton County Peaches. I have been visiting Durbin Farms since I was a child, and they still have the most unbelievable peaches. These peaches (below) were bigger than a softball, sweet, juicy and bursting with fresh peach flavor. A friend of mine passed me this recipe for Simple Peach Pie, and it really can’t get much easier than this. It’s fast with very few ingredients, and it was gone before I could turn around. When you have peaches this sweet, you don’t even need vanilla ice cream on the side, but it is a good addition :).
Sometimes simple is better, and recipes with only three ingredients actually can be as flavorful as if they had nine. This Blueberry-Banana Ice is one of those recipes that is almost too basic (and good) to be true just in time for July 17th “National Ice Cream Day.” Purchase ripe bananas and in season blueberries and freeze them (I used zip-top plastic bags). Remove and toss in the food processor or blender with a touch of honey, and you’re done. Feel free to experiment with other berries if you wish. This is the perfect healthy dessert for summertime, and it truly hits the spot.
It’s been a wild week in Alabama. So many heartbreaking stories and scenes of destruction just a mile or so away. We are very lucky even though it’s 6 days and no power. Work and life continues, and I’m headed to Nashville on Friday to be on Newschannel 5 “Talk of the Town” at 11 a.m doing a sandwich show for my new book “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. Before I go, I thought I would leave you with one of the easiest recipes for Pork Fajitas. I like to use thinly sliced pork tenderloins that can be found at the grocery store. These are thin, healthy, low-fat and cook very quickly. Happy Cinco De Mayo everyone!
I love super easy recipes that have only a few ingredients but still taste like a million bucks. This 3 ingredient recipe for Apple Tart is as easy as can be. I used Puff Pastry, fresh apples, granulated sugar, and that was it. It’s so easy to prepare, and it’s perfect for dessert, brunch or even an afternoon snack (my kids devoured this after school).
Every year my sister, Julie, and sister-in-law, Debby, make the best Mandel Bread for Passover. If you haven’t tried Mandel Bread before, it’s very similar to biscotti. It is a great Passover dessert, afternoon snack or perfect for breakfast served with coffee or tea. I will warn you that it is also super addictive, so once you start, you almost can’t stop eating it. You can make it with or without chocolate chips, but this version with lemon juice and almond extract is wonderful.
Quinoa (pronounced Keen-wah) is the wonder grain and one of the best plant sources of protein. It’s loaded with protein, fiber and is gluten-free. It’s so versatile, and when my sister came across this recipe in Ellie Krieger’s book, “So Easy”, she told me I had to test it out. I changed the recipe slightly using Pink Lady apples, more cranberries and walnuts instead of pecans. It was out of this world. Her recipe suggests to top it with milk, honey and cinnamon, but it was great all by itself. I love it because it’s so easy, filling and has no added sugar. It’s also bursting with great flavor. My kids loved it too, and I enjoyed serving them a hot healthy breakfast.
My three kids love Asian flavors. This easy and healthy Beef and Broccoli recipe is a hit every time that I make it. It’s so quick to prepare using very simple-to-find ingredients. I love using skirt steak as it’s very tender after being simply marinated with honey, fresh ginger, reduced-sodium soy sauce, sesame oil, garlic and red pepper flakes. Just marinate the steak for an hour or overnight, and dinner is on the table in less than 30 minutes. This dish is perfect for busy weeknights. I served with rice and some edamame beans, and everyone loved it (and was full).
Saint Patrick’s Day is celebrated on March 17th, and I am so excited that I will be spending my Saint Patrick’s Day teaching a Kid’s Cooking Class at the Park City Mountain Resort in Park City, Utah. We we will be making kid-friendly apres ski snacks to make in the condo. See more information about this fun class on the“Snowmama” website. One of the recipes I’ll be making in the class is this healthy, easy and very simple Saint Patrick’s Day Fresh Herb Dip. It’s a great way to get the kids to try fresh herbs such as basil and dill and to eat fresh vegetables. I like to use reduced-fat Greek yogurt in this recipe because it has so may health benefits and is filled with protein which is perfect after a long day of skiing. Enjoy this recipe on Saint Patrick’s Day or any time of the year.
