Edamame with Cranberries and Feta

My 3 kids and I love eating edamame beans for snacks or a healthy appetizer. A friend gave me this recipe for Easy with Cranberries and Feta, and I made it twice in a week. This easy blend starts by using frozen edamame beans, thawed combined with cranberries, feta, olive oil and lime juice. Whether you want a healthy side dish to accompany fish, chicken or beef or a great salad topping, you’ll love this savory, sweet mixture. Edamame beans are so healthy for you. They contain 100 calories with 8 g of protein. It also provides 4 g of fiber and is a good source of calcium, copper, folate, iron, magnesium, manganese, phosphorus, thiamin, vitamin A, vitamin C and vitamin K. Need I say more?

 

Super Easy Cobb Salad: Kid Friendly Recipe

Lately it has been such a struggle to figure out what to make the kids for dinner. I am always trying to come up with something new and different to please all three of my kids. I made this Easy Cobb Salad recipe last week, and it was quite the hit. I used chopped rotisserie chicken, but leftover grilled chicken, shrimp or steaks would also be a nice addition. Between my daughter’s dance practices three nights a week and my two boy’s basketball schedules, January and February has been nuts. This main dish salad is a great new recipe that all three of them agreed that they really liked. Prepare your own salad dressing using red wine vinegar, Dijon mustard and olive oil or use ranch or blue cheese. Have a great week ahead!

Easiest Cucumber Salad

Cucumber and Tomatoes always go together naturally for me, as this was something I always ate growing up in Alabama. Cucumbers are the star of this week’s Summer Fest, an amazing round-up of recipes and ideas held by Food Network. Bistro Pasta Salad

As you know, for the past month I have been working with CanolaInfo on its World Heart Day 2011 campaign. To help encourage families to take their health into their own hands, I developed the “Home is Where the Heart Is” Recipe Collection, which is filled with delicious, healthy and easy-to-prepare recipes that both kids and parents will enjoy.

Cardiovascular disease (CVD) is the leading cause of death in the U.S for men and women as well as something that has affected my family directly. Unfortunately, childhood obesity has continued to grow at an alarming rate. The reason this is so disturbing is because research has shown that children who are overweight or obese are more likely to be overweight or obese as adults. Obesity is a huge risk factor for CVD but one that is preventable with diet and exercise. That is why teaching my children healthy eating habits is so important to me – and something that can start right here at home.

As a mother of three, I wholly understand the challenges of being a busy, working mom and getting healthy meals on the table – not to mention making something the kids will eat! When developing this recipe collection, I really tried to consider what would be fast, economical, healthy and delicious for the entire family, and I think I accomplished just that.

As a common ingredient in all these recipes, I chose to use canola oil. It has the least amount of saturated fat and most omega-3 fat of all cooking oils. Its versatility in cooking and baking simplify my life even more, and it’s inexpensive! This coming Thursday, Sept. 29, is World Heart Day. So Healthy, So Good: Quinoa Salad with Arugula and Feta

I’m shooting 4 television shows this week for NBC 13 “Daytime Alabama”, and here’s one of the dishes I will be making. For those of you not familiar with quinoa, I hope that I can help out. Quinoa is an amino acid protein rich seed that has a fluffy slightly crunchy texture and a nutty flavor when cooked. You cook it just as you would cook rice although you need to rinse the seeds before cooking them. Most commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and Swiss chard with so many health benefits. Quinoa is a very good source of manganese as well as a good source of fiber, protein, magnesium, iron, copper and phosphorus. It is said to be helpful to those who get migraine headaches and helps reduce diabetes and atherosclerosis. I love this Quinoa Salad with Arugula and Feta as it’s so fresh, healthy and flavorful. Feel free to make it a main dish by adding cooked chicken or shrimp. This is the perfect dish to start the new year on the right (and healthy) foot.

We have been eating a lot of cold dishes lately since it is beyond hot here in Alabama. I love trying new versions of chicken salad, and this Greek Chicken Salad is so easy and so flavorful. I used rotisserie chicken to make this recipe even easier. Serve on lettuce leaves or in a pita for a really simple main-dish.

Healthy Snack or Appetizer: Carrots with Low-Fat Dijon Vinaigrette

Kelly, one of my dear friends and running partners, has been talking a lot about eating “raw” foods lately. She’s one of the most intelligent and healthy people that I know, so when she talks, I try to always pay close attention. I have always been intrigued by raw food diets and juicing. I served up this platter of fresh raw carrots with a homemade Dijon Vinaigrette, and they sure went fast. It was a simple way to get some raw veggies in the kids’ diet, but also makes a great side dish or appetizer.

Layered Chicken Santa Fe Salad

We love salads for supper, and anything Southwestern goes over great at my house. Layered Santa Fe Salad is a breeze. Purchase a rotisserie chicken from the grocery, or use leftover grilled chicken. Serve with salsa or, for kids, ranch dressing. In under 25 minutes, you will have a colorful dinner on the table that is so healthy, high in protein and low in fat.

What to Have for Lunch: Low-Fat and Healthy Turkey-Edamame Salad

People ask me all of the time, “What do you eat for lunch?” I guess because I am in my kitchen all of the time, or because I work and workout a ton, they are curious. Also, I think most of us get in a lunchtime rut and eat the same things for lunch over and over (I know I do). I threw together this simple salad in about 10 minutes this week, and my neighbor had stopped by and thought what I threw together was so fabulous. I thought others might enjoy this Turkey-Edamame Salad as well, but feel free to add whatever is in your vegetable bin and use your favorite reduced-fat salad dressing.

Oh This Salad so Good! Spinach-Turkey Salad

This salad is so simple and so delicious! The combination of fresh spinach, basil, chopped pine nuts, turkey and Parmesan create an incredible healthy, fresh, main-dish salad. I served this salad for dinner, and it disappeared faster than I could blink. Serve it with your favorite vinaigrette or just a drizzle of red wine vinegar and olive oil. It has so many great flavors already, so it doesn’t need a lot of dressing. Welcome in spring with clean eating and this fresh salad.
