I have been searching for a new carrot cake recipe for a while, and I finally found one. I am in love with this new cookbook 200 Best Sheet Pan Recipes and this recipe for Decadent Carrot Cake by one of my favorite cookbook authors, Camilla Saulsbury and Published by Robert Rose (my publisher). Getting dinner together can be challenging, especially for those who work full time and/or have kids. Sheet pan meals are the new one-pot meals since they allow you to cook several components of your meal at one such as her recipes for California Fish Tacos with Cucumber and Pineapple, Sheet Pan Clam Bake and even Weeknight Chicken and Stuffing. Her book begins with an “extra-simple pantry meal” chapter, followed by breakfast and brunch recipes, meatless meals, recipes for seafood, chicken, turkey, beef, pork etc. Of course, I love all of the recipes I have tried so far!

Children, including those who claim an aversion to vegetables, are drawn to carrot cake. Perhaps it’s because the carrots create a moistness that plays up the sweet spices of the cake, and accent the component everyone loves most: the tangy cream cheese icing. Whether you have kids or not, this carrot cake is the perfect mix of sweetness and softness. It’s perfect for Mother’s Day, spring parties and summer gatherings. It’s also so simple to prepare. Tip for this salad:

After spiralizing bell peppers, you will need to remove the white flesh and seeds from the strands. Alternatively, you can core the peppers, but they will not hold their shape as well during spiralizing.

The salad topping can be used on a variety of fruit and vegetable dishes. It can be prepared ahead of time and stored in an airtight container in the refrigerator for up to 1 month.

Now that school is starting back, having a slow cooker is a handy appliance that can be a  lifesaver. Author, Judith Finlayson shares how to create 175 different recipes in her latest book “175 Essential Slow Cooker Classics” and how easy and convenient it is. You’ll find recipes for everyday favorites to elegant entertaining as well as an array of vegetarian dishes, tips, techniques and photographs. I love this recipe for Spinach and Artichoke Dip. What a simple, brilliant recipe idea! Judith offers great tips in her cookbook. If you prefer a smoother dip, place the artichokes and spinach in a food processor, in separate batches, and pulse until desired degree of fineness is achieved. Then combine with remaining ingredients inc the slow cooker stoneware.

After I wrote my cookbook, 400 Best Sandwiches Recipes, I was often asked in television and radio interviews which sandwich recipe was my favorite? I can’t tell you how difficult it is to choose between 400 different sandwich recipes. This California Sandwich is in my top 5 favorites. I love the simplicity of the goat cheese spread combined with zucchini, squash, tomatoes, avocados and sprouts on this multigrain bread. If you can’t find alfalfa sprouts, I love using kale or broccoli sprouts, which are also widely available in grocery stories. This sandwich is perfect for the summertime for lunch or a light dinner served with a fresh corn salad and fruit. I promise it is as good as it looks!

If you say a recipe with chocolate chips, I am in! Better yet, in a scone. These Apricot Chocolate Chip Scones are a wonderful fall or holiday breakfast recipe. You’ll enjoy incredibly creative recipes from cakes, pies to breads, muffins, beverages, bars and sauces with simple techniques and preparation and minimum fuss. These scones come together beautifully using a food processor, which effortlessly cuts the butter into the flour resulting in tender and flaky scones. My kids and I love that they combine apricot and chocolate chips, and I can’t wait to make these again for Thanksgiving or Christmas morning!

Sesame, Hemp and Carrot Slaw & Cookbook Giveaway

Homemade Ice Cream Sandwiches

For Fourth of July weekend, I wanted to share my recipe for Homemade Ice Cream Sandwiches from my new cookbook “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. I came up with this recipe last summer while I was working on this book. My three kids were in the kitchen helping me, so I tried to make it as simple as possible. It is perfect to serve this weekend if you are celebrating with friends and family, or anytime this summer. Use your favorite homemade chocolate recipe or store-bought cookie dough.
