5 Mother’s Day Breakfast Recipes

I can’t believe Mother’s Day is this weekend. Last year was a rough, emotional mother’s day with my mom passing away the week before. It has been a tough year to say the least, but being a mom with 3 kids makes everything in life worth it. A good friend of mine tells me often to “Roll with the punches”. This is the best advice I can give to anyone, especially moms. Citrus at Its Best: Orange Ricotta Pancakes

This weekend, I am so excited to be speaking at  Food Blog South, a conference and workshop in Birmingham, Alabama on Recipe Development along with the talented Virginia Willis. It’s going to be wonderful weekend filled with bloggers, writers, photographers and so many others from around the country. Proceeds from the conference go to support a charity to restore the Gulf, and also support The Desert Island Supply Company, a Woodlawn-based writing center for kids. Recently, I was working on a recipe development project for a client creating recipes made with citrus fruits. I loved how these Orange Ricotta Pancakes turned out: so light and fluffy with the perfect hint of orange flavor. This makes a great breakfast idea for this weekend since oranges are at their peak. Weekend Pancakes with a Twist: Pomegranate Ricotta Pancakes with Pomegranate Syrup

Making pancakes on the weekend is one of my favorite things to do with the kids. This recipe is really special because it includes ricotta cheese as well as pomegranates and pomegranate juice. It is a recipe I came up for POM, and it’s really wonderful. Since pomegranate season is about over, try substituting blueberries for the pomegranates in the pancakes.
