Tip for this salad:

After spiralizing bell peppers, you will need to remove the white flesh and seeds from the strands. Alternatively, you can core the peppers, but they will not hold their shape as well during spiralizing.

The salad topping can be used on a variety of fruit and vegetable dishes. It can be prepared ahead of time and stored in an airtight container in the refrigerator for up to 1 month.

Published by Robert Rose Books, this cookbook is filled with 500 recipes that are bold, innovative, fresh and wonderful for vegans and non-vegans. You’ll find recipes for every occasion and every meal of the day. I love the Peach Cobbler, Mini Quinoa Croquettes, Singapore Summer Rolls, and these Vanilla Chai Power Bars. These energy bars are a great item to keep on hand for snacking on the go, or enjoy them as a quick breakfast with a cold glass of milk. Filled with millet, chia seeds and spices, these bars are too good! My kids went wild over these, and they are awesome for travel too. If you’re looking for puffed quinoa and millet, you can find them in most well stocked supermarkets and natural food stores. Enjoy and be sure to check out this amazing cookbook!

Ratatouille is a French side dish located with Mediterranean vegetables. I decided to turn this healthy side into a salad with grilled vegetables and quinoa with this Grilled Ratatouille Salad recipe. This gluten-free and vegan recipe is perfect for a weeknight summer dinner or weekend lunch. I am actually serving this alongside grilled steaks this Memorial Day weekend. It’s three of my favorite things: healthy, flavorful and beautiful!

Vegetarian Quinoa Recipe

My daughter, Leigh, had to make a Peruvian Quinoa recipe for her advanced Spanish 2 class, which gave her and I the chance to come up with a new quinoa recipe. We experimented with many recipes, but we loved this Vegetarian Quinoa. Luckily, for me, my three kids love quinoa, and it’s a fabulous ingredient because it’s gluten free, rich in protein, contains all 9 of the essential amino acids and so much more. Quinoa is high in iron which helps our red blood cells stay healthy, high in lysene, essential for our tissues growth and repair. This superfood is also high in Riboflavin (B2) which is super important for our brain health and improves our energy and metabolism. It also has twice as much fiber as other grains. Need I say more? Enjoy this for lunch as a side dish or afternoon snack. I spooned it over fresh arugula with some crumbled feta cheese, and it was a great, healthy lunch. Here’s to a great and healthy week ahead!

Quinoa Tabbouleh Wraps

With back to school in full swing, I try to come up with new ideas for school lunches for my kids. These Quinoa Tabbouleh Wraps are great for the kids as well as for those of us who take their lunch to work (or work from home). Place the tabbouleh in an airtight container and bring your tortillas separately. This recipe is also gluten free if you use gluten free tortilla wraps. One more great thing. This recipe can be halved or if you have leftovers, this is a great, healthy salad to have on hand.
