Orange Spiced Pumpkin Martini

Orange Spiced Pumpkin Martini

Since it’s officially Fall, I wanted share a cocktail recipe using Voga Italian Wine, featuring autumn flavors. This Orange Spiced Pumpkin Martini is fabulous this time of year to celebrate the season, perfect for parties or cocktails with friends. You can serve this as a cocktail with appetizers or even for dessert. If you are looking for other fall cocktail pairings, just think about seasonal ingredients. I love gin with pears and apples, bourbon with quince, honey with just about anything and experiment with herbs such as sage, rosemary, thyme and cranberries.

October and Pumpkin season is almost here, so I have been making my list for 10 Awesome Pumpkin Recipes starting with my Lightened Up Pumpkin Muffins, I always purchase mini pumpkins for my table, and as soon as I put them out last week, my kids started getting excited for pumpkin recipes and Halloween. I can’t believe they are already talking about what they are going to “be” for Halloween, but fall is always so much for the kids. Please leave a comment telling me what is your favorite pumpkin recipe and hope your week ahead is a great one!

Start the Day Off Healthy: Oatmeal with Egg Whites

It’s a busy week ahead for me including with radio show on Magic 96.5 this Wednesday as well as a nutrition seminar this weekend at Bikram Yoga Birmingham. For both events I’ll be talking about “Healthy Eating Tips” to get your new year off to the right start. One of my top tips is to never skip breakfast. If you like oatmeal for breakfast, you’ll love this recipe for Oatmeal with Egg Whites. This simple combination is something my friend, Kelly, of Hulsey Gardens, told me she eats daily. I made mine with a touch of brown sugar and blueberries. Kelly normally adds 1 tablespoon of pureed pumpkin, 1 teaspoon of pumpkin pie spice and 1 teaspoon vanilla to hers. Adding sliced strawberries and ground cinnamon is also delicious. Regardless, this is one healthy breakfast recipe that has the perfect mix of protein, fiber and carbohydrates, and it is a great way to start your day and new year on the right foot.

In Search of the Perfect Pumpkin Pie Recipe

This weekend I have been in search of a great Pumpkin Pie recipe to make for Thanksgiving. You see, I’m getting off easy this year (yea!). I’ve hosted Thanksgiving at my house the past several years, but my sister and I swapped holidays this year (her request). I still have to make several things to bring to our family event of over 20 people. Since she assigned me the Pumpkin Pie, I have been searching for something new and different. The recipe (above) is a Pecan Streusel Topping from my friend Marge at A Sweet and Savory Sweet Life. It looks so fabulous, and it was one of the first ones I came across. Here are some others, including a “lightened up recipe from Cooking Light as well as vegan version. Enjoy!

Healthy Mini Pumpkin Flaxseed Bread Recipe

I love one bowl, no mixer, quick bread recipes such as this one for Mini Flaxseed Pumpkin Bread Loaves. Not only is this so easy to prepare, but my kids can almost basically make them on their own with very little clean-up. I added a touch of nonfat Greek yogurt and ground Flaxseed to make these even healthier, moister and with added crunch, and my 3 children had no idea those ingredients were even in there. These Mini Pumpkin loaves make a great breakfast, afternoon snack or dessert that you can feel good about eating and serving to your kids. These also make wonderful Christmas food gifts as well :).

Halloween Cupcakes

Every Halloween my daughter, Leigh, loves to have friends over to decorate cupcakes for Halloween. I purchase an array of baking supplies, and she and her friends scan the internet for inspiration. They always ask me what blogs are some of my favorites so I do have some influence with some of their selections. Here’s what we thought were some of the best Halloween Cupcakes we have come across lately. To start, our jaws dropped when we saw these Black Chocolate Widow Rum Cupcakes from “6 Bittersweets”. Hope you’ll enjoy some of our ultimate favorites.

My Favorite Comfort Food: Fall Pies and Tarts

Just coming off speaking at Food Blog Forum in Nashville this weekend, I woke up feeling so inspired. The talent of food bloggers across the globe truly amazes me. These are some of the hardest working people you’ll ever meet. If you’re not a food blogger, I can’t begin to describe the amount of time and effort it takes to put together just one post. Starting with the recipe concept, there is grocery shopping, cooking and testing, writing, photography, styling and then posting. Each post takes many, many hours. On that note, I wanted to start the week with comfort food at its best: Fall pies and Tarts. These selections have caught my eye in the last week, and I’m not sure which one to make first. This Pumpkin Pie Tart with Almond Crust (Gluten Free) comes from fellow blogger and friend, Marla Meridith of Family Fresh Cooking. I can’t wait to make this one with my kids. Hope you will enjoy looking at these recipes and photos as much as I have.
