High Antioxidant Superfoods Salad

Since I have been doing a lot of nutrition seminars and speaking engagements lately on superfoods and healthy eating habits, it has been so fun to experiment with various combinations of super healthy ingredients. Last week, I thew together this with this High Antioxidant Superfoods Salad. My newest favorite ingredient is broccoli sprouts, and my kids and I are infatuated with them. They are so healthy and are said to help prevent cancer, reduce inflammation and even help protect against ulcers. This salad is also filled with some of my other super food favorites including berries, pumpkin seeds and colorful greens. If you want a refresher on the health benefits of blackberries, read my post on “Top 10 Health Benefits of Blackberries.”  Feel free to add grilled chicken or shrimp along with your favorite salad dressing, or just simply use balsamic vinegar and oil.

Broccolini with Pumpkin Seeds Recipe & Health Benefits

Broccolini is a cross between broccoli and kai-lan, a chinese broccoli. It is slightly sweeter than broccoli, and its stalks are thinner so it cooks quicker. I love it when I need to prepare a healthy, fast side dish. Broccolini has great health benefits such as having anti-inflammatory properties, cancer fighting benefits, high antioxidants and more (below). This recipe for Broccolini with Pumpkin Seeds is one of my new family favorites. My kids ate this with no complaints. This recipe is also gluten-free on the paleo diet, and is a super healthy side to add to your weeknight dinner table.

5 Health Benefits of Broccolini:

1. It has beta carotene which helps boost your immune system.

2. It has high levels of vitamin K and Calcium which is great for bone health.

3. It is high in fiber so it aids in digestion, curbs overeating and maintains blood sugar levels.

4. Broccolini is high in Vitamin A and C which help boost immune system, contribute to better vision and helps boost metabolism.

5. Broccolini is high in potassium which is good for the nervous system, promoting brain function and muscle growth.

Healthy Food Gift Idea: All Natural Granola Bars

I’m always looking for new granola bars recipes to try since it’s one of mine and my 3 kid’s favorite snacks. I saw a version of this bar recipe on The Whole Kitchen by my friend Jenn which was adapted from a talented Cookbook Author (who I also know) Camilla’s Enlightened Cooking. These Homemade, All-Natural Granola Bars were a huge hit with the kids. I was so excited to share this recipe for a healthy homemade holiday food gift option. These make a great breakfast, afternoon snack or pre-workout offering. I even break them up and stir them into nonfat Greek Yogurt for a wonderful high protein breakfast. Favorite Back to School Snack: Healthy Trail Mix

School starts in one week so I (and we) are trying to brace ourselves or get fired up (depends which way I look at it). I have been thinking about healthy snacks since my daughter, Leigh, takes her lunch every day and goes to cheerleading straight from school. Also, my two boys, Alec and Zachary, are ravenous when they get home from school, and this recipe really fills them up. This trail mix is a cinch. I call it a “dump and stir”. It has a got a great variety of ingredients with protein, fiber and carbohydrates. They love eating it plain, adding milk to it or even stirring it into Greek yogurt. The only problem is: I have to control myself. Once I start eating it, I cannot stop.

10 Foods Great for Healthy Skin

Summer is now upon us, and this is the time of year to really take care of your skin. Many doctors say the more attention we pay to what we put in our body, the more it will help with skin problems later. I thought I would share some of my favorite foods that are great for healthy skin. Let me know if you have any favorites to add to my list.

 

1. Blueberries and Strawberries-Foods high in antioxidants are ideal for healthy skin. These should be on your summer list while they’re in peak season.

2. Green Tea-Green tea contains phenols which have anti-inflammatory properties. It has been said that drinking green tea daily can even prevent skin cancer.

3. Avocados-Filled with essential oils and B-complex vitamins, avocados are filled with Niacin (vitamin B3) which is important for healthy skin.

4. Almonds, Pumpkin Seeds and Walnuts-These nuts, filled with vitamin E, zinc and magnesium, are great for your skin.

5. Salmon-Contains essential fatty acids, omega-3 and omega-6 and can help create great moisturized looking skin.

6. Water-Many of us have heard it before, but water keeps you hydrated and keeps the skin healthy and younger looking. Make sure you drink at least 8 glasses a day.

7. Low-Fat Yogurt-Dairy products are full of Vitamin A necessary for healthy skin. Try Greek yogurt or even low-fat cottage cheese if you like.

8. Carrots-An excellent source of Vitamin A, carrots also contain high amounts of beta-carotene and antioxidants which helps prevent damage to the skin.

9. Mangoes-Mangoes are high in Beta Carotene and Vitamin A, and they are a good source of antioxidants. These have also been called an “acne cure”.

10. Kiwi-Kiwi packs more vitamin C than any other fruit which helps maintain collagen in our skin.  Collagen helps keep the skin firm.
