As you have seen from my recent posts and social media feeds, we are huge fans of this type of breakfast. It’s filled with protein, fresh fruits, healthy seeds and nuts. For Easter Sunday, how about something elegant such as these Cheese Puffs, similar to a gougère, a French baked pastry dough filled typically with GruyèreComté, or Emmentaler cheese? My sister is headed to France so I made them in her honor. Sometimes they are even filled with mushrooms, beef or ham. These Cheese Puffs are as fabulous as they look and have the secret ingredient, Colman’s Mustardwhich gives it an extra zesty flavor. If you like mushrooms and burgers, read on. The Seasons 52 Restaurant and Mushroom Council have just introduced the Signature Beef and Mushroom Burger (Signature Burger), which is Angus beef blended with mushroom duxelle, butter lettuce, roasted tomatoes, house made pickles. This mouthwatering burger is new to their summer menu, and it’s made from 100% Angus beef and blended with mushroom duxelle (finely diced, sautéed mushrooms). I love finely chopping mushrooms so that they’re the consistency of ground meat, and then combining the two and using them together to create new recipes that are nutritious (this is also a great way to get your kids eating mushrooms). Mushrooms are so versatile and can be used in so many ways, while bringing flavor and nutrition your meals.  They’re naturally low in calories, fat-free and cholesterol-free and provide important nutrients like vitamin D, B vitamins, antioxidants and potassium. I took my two boys to Season 52 for the first time, and they LOVED it! We almost fought over this burger when we tasted it. Now the question is: How soon can we go back?

We are loving summer fruit, and we bought a ton of blueberries yesterday! Instead of making a large blueberry cobbler, we decided to make this Individual Blueberry Cobbler recipe. It’s super easy with only 15 minutes of prep time. Feel free to add frozen vanilla yogurt or ice cream, if desired. Blueberries are great for brain health, cancer protection, digestion and constipation, and they are have the highest antioxidant capacity of all fresh fruit. Enjoy and have a fabulous week ahead!

TGIF! We have had the best week at the beach and are headed home today! It has been amazing one-on-one family time! Thinking ahead… what’s for dinner when we get back? This 15 minute recipe for Penne with Tomato Basil Sauce is on my list for something really easy and quick (under 15 minutes). This is also a great way to use up some of your fresh basil (if you’re growing it this summer).  You can also use summer fresh tomatoes, roast them and puree them. Happy May and Cinco De Mayo! I am finally back from Italy, and now is the time to spice it up for summer entertaining just in time for Mother’s Day, Memorial Day, graduation, lake and beach parties. I made this Taquito Layered Dip today when I was having some friends over, and I saved a ton of time by using Chicken Taquito’s by Jose Ole. Feel free to use the chicken or steak varieties, and add your favorite southwestern toppings such as black olives, cilantro, avocado or jalapeños. You can also make your life simpler (and sometimes save money) using frozen foods to create fabulous appetizers, main dishes and even desserts. I used whole wheat and all-purpose flour, flaxseed and nonfat Greek yogurt to create a flavorful, moist bread. My kids were skeptical at first, but shortly after they tried it, they were gladly helping themselves to seconds.
