For an fabulous tasting appetizer, try these Pork Eggrolls which are so easy and come out great! These egg rolls make a great alternative finger food for the Super Bowl and are a family favorite served with fried rice or miso soup. Use water to seal the edges, but you don’t need much at all–not even 1 teaspoon on each wrapper. Use the preshredded cabbage already in the package to speed up the preparation time and feel free to substitute ground chicken. Be sure to make extra because these great heated up later or the next day. Check my favorite fried rice recipe, Quinoa Fried Rice  which is gluten free!

My kids requested Artichoke Basil Dip for an appetizer the other night so I decided to take the remaining artichokes and make this Artichoke Basil Pesto.  If you like artichokes, basil and almonds, you’ll love this recipe. It’s great served as a side with fish, chicken, pork or seafood, and it only takes 5 minutes to prepare.

This week’s Summerfest from the Food Network features one of my favorite stone fruits: plum recipes. My recipe for Pork, Plum and Rosemary Kabobs is a main dish favorite at our house during the summertime. The sweet and herb flavors blend wonderfully with the pork and plums. When I grill these, the kids are so excited. I love to cut additional plums for grilling because usually the kids are arguing about who took more. Easy Pork Fajitas for Cinco De Mayo

It’s been a wild week in Alabama. So many heartbreaking stories and scenes of destruction just a mile or so away. We are very lucky even though it’s 6 days and no power. Work and life continues, and I’m headed to Nashville on Friday to be on Newschannel 5 “Talk of the Town” at 11 a.m doing a sandwich show for my new book “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. Before I go, I thought I would leave you with one of the easiest recipes for Pork Fajitas. I like to use thinly sliced pork tenderloins that can be found at the grocery store. These are thin, healthy, low-fat and cook very quickly. Happy Cinco De Mayo everyone!

Chipotle-Spiced Pork: 5 Ingredients, 10 Minutes

Friends have been asking me what they can make for dinner since they often get in a rut and need new ideas. I know they want recipes that are simple, light and tasty. I love using thinly sliced pork loin chops often because they cook so quickly and are so versatile. This simple version of Chipotle-Spiced Pork has only 5 ingredients, and they are super flavorful (and pretty too)! If you’re making some for the kids, omit the chipotle, and add additional lemon pepper and a squeeze of lemon juice (unless they like spicy foods). Summer Fest and Stone Fruits: Pork and Plum Skewers

I was so excited that Summer Fest 2010 this week is featuring recipes using stone fruits from bloggers around the country. Just make a simple marinade, thread plums and pork on skewers, and grill. This recipe was featured in the July issue of Birmingham Magazine, and I couldn’t wait to share it for Summer Fest.

Summer Easy Dinner: Glazed Pork with Peach Salsa

Try Pork with Peach Salsa for a quick summer weeknight meal. This recipe is so easy using peach preserves and honey as a glaze over the pork. I use boneless pork loin chops because they cook so quickly, perfect for busy people. Feel free to grill the pork outdoors, inside in a grill pan or even nonstick skillet. This Peach Salsa is wonderful and filled with fresh peaches, cilantro, purple onion and lime juice. If you don’t eat pork, feel free to subsitute boneless chicken breasts, or I prefer chicken cutlets because they are thinner and cook even quicker.

Easy, Healthy Appetizer or Main-dish Recipe: Pork Lettuce Wraps

This recipe was featured on NBC 13 Daytime Alabama for I Can’t Believe It’s Not Butter this week. My kids love lettuce wraps so this is perfect to serve at my house and only 3.5 grams of fat. It’s also very economical, only $6.93 for the recipe or $1.73 per serving. Feel free to substitute steak, chicken or shrimp for the pork in this recipe.

Healthy and Light: Simple Pork Tenderloin with Pomegranate Salsa

So many people tell me that they’re intimidated to grill pork tenderloins. Don’t be. They are really simple to do and come out tasting great, especailly this recipe for Pork Tenderloin with Pomegranate Salsa. I developed this recipe for POM Pomegranate juice and promotion of pomegranates, and it is really delcious and healthy. If you don’t eat pork, this salsa goes great with chicken or fish. This makes a great Sunday night or weeknight dinner. It’s so pretty and flavorful.

Weeknight Family Comfort Food: Spinach-Mushroom Baked Ziti

Normally I can’t get my daughter, Leigh, to eat much protein. When I make pasta at home, she usually doesn’t like it with meat sauce, until she tried baked ziti at camp. I added spinach, mushrooms and garlic to this version, but if you’re kids are picky eaters, just omit those ingredients and use an 11- x 7-inch baking dish. Spinach-Mushroom Baked Ziti makes a great comforting weeknight dinner.
