Mixed Berry and Orange Smoothie

When I was in Park City last month, I was lucky enough to stay with my first blogging friend, Kelly, from Mountain Mama Cooks. Not only is Kelley a blogger, but she has had her own private chef business in Park City for many years. The first day I was there, we went to work out. Afterwards, she made the best Mixed Berry and Orange Smoothie, which I tried to recreate when I got home. She used almond milk instead of juice in hers, and it was fabulous. I didn’t have any on hand, so I used pomegranate juice. This smoothie recipe is so refreshing after a workout or makes a great breakfast if you add Greek yogurt or protein powder.

We are huge fans of pomegranate juice at my house. I like to put a splash in my water bottles, but the kids will drink it by itself. Three Berry Antioxidant Juice

My 3 kids absolutely love homemade juice, and I mean “love”. Lately I have been getting so many questions daily about a “juice cleanse”, and my thoughts on that… I like to tell people I believe everything in “moderation”. My Favorite Winter Salad: Radicchio Salad

Now that Thanksgiving is over, I want something light, healthy and flavorful. Radicchio Salad, with Walnuts and Pomegranates, is a wonderful combination of radicchio, romaine, arugula, apples, walnuts, pomegranate seeds and cranberries. Feel free to use whatever greens you have on hand, and be sure to mix them for color, flavor and texture. If you haven’t tried radicchio before, you should. It’s a red-leafed salad green that is slightly bitter. It can also be grilled or sauteed, but I love it in this salad. Add cooked turkey, chicken, pork or shrimp for a main dish salad.

Thanksgiving Dessert: Cranberry-Pomegranate Granita

My kids are obsessed with Italian ices, frozen treats and popsicles. I thought, “Why not create a Thanksgiving dessert that would be refreshing, tasty and one that they would go wild over?” I started with Cran-Apple juice (which is their favorite), added some POM pomegranate juice (my favorite) and ginger-ale (everyone’s favorite). It came out great, and it was an instant hit. What a fun idea for Thanksgiving or anytime during the holiday season or year!

Weekend Pancakes with a Twist: Pomegranate Ricotta Pancakes with Pomegranate Syrup

Making pancakes on the weekend is one of my favorite things to do with the kids. This recipe is really special because it includes ricotta cheese as well as pomegranates and pomegranate juice. It is a recipe I came up for POM, and it’s really wonderful. Since pomegranate season is about over, try substituting blueberries for the pomegranates in the pancakes.
