This Meadowood Garden Beet Salad is one of Meadowood’s favorite dishes during the summer harvest season. The beets can be small heirloom varietals of all colors and stripes (literally). Chef Alejandro Ayala recommends taking some artistic license with the presentation; he cuts the beets into various shapes as well as paper-thin cross sections. The salad is at once both bright and earthy, and the pistachio “soil” is an unexpected, at-home, twist.

I have something healthy for St. Patrick’s day morning. How about a delicious and nutritious Green Pistachio Smoothie that will nourish and energize you in preparation for the fun-filled day? Halloween is almost here and you know what that means…spooky fun, costumes, family, friends, and lots of treats! In celebration of the upcoming holiday, I wanted to share these fabulous treats by Jenny Engel and Heather Goldberg of Spork Foods. They have created a delicious Pistachio Chewy Bite Popcorn Balls recipe that are easy to make and perfect for Halloween! This recipe is nutritious, gluten free, vegan, and something you will want to make all year long. These popcorn balls use Pistachio Chewy Bites from Setton Farms which have 7 grams of protein per serving and are made with agave nectar. My kids loved these, but these are fabulous for adults too!

 

Quinoa Recipe and Quinoa Cookbook Giveaway

Healthy Food Gift Idea: All Natural Granola Bars

I’m always looking for new granola bars recipes to try since it’s one of mine and my 3 kid’s favorite snacks. I saw a version of this bar recipe on The Whole Kitchen by my friend Jenn which was adapted from a talented Cookbook Author (who I also know) Camilla’s Enlightened Cooking. These Homemade, All-Natural Granola Bars were a huge hit with the kids. I was so excited to share this recipe for a healthy homemade holiday food gift option. These make a great breakfast, afternoon snack or pre-workout offering. I even break them up and stir them into nonfat Greek Yogurt for a wonderful high protein breakfast. One of the best parts being a food blogger is when some of my favorite media writes about me, and it’s just out of the blue. Yesterday, a very famous food blog, “The Kitchn” listed their favorite top 10 Brittle and Bark recipes. I made it on the list in great company with Martha Stewart, Bon Appetit, Epicurious and many others. This recipe ran last year during my first month of my blog. It’s 3 ingredients and fabulous. I will be making it on television next month in Birmingham NBC 13 “Daytime Alabama” and NewsChannel 4 CBS “Talk of the Town” in Nashville, Tennessee.

Chocolate-Pistachio and Cherry Bark

Last week I posted White Chocolate, Pistachio and Cherry Bark, and it was an instant hit. For those of you who don’t love white chocolate or who may want to give a gift combination of white and dark chocolate, here is the option of using semisweet or dark chocolate. The recipe worked great (the dark chocolate is my favorite), and is so easy that it doesn’t seem possible it could taste this delicious. Enjoy, but beware…it is very addictive!

Dried Cherry and Pistachio Bark

Feel free to double or triple this recipe. To see White Chocolate version, see last weeks post.

Prep: 5 minutes

Cook: 1 minute

Yield: 11/2 pound

Ingredients

1 (12-ounce) package semisweet or dark chocolate morsels or chunks

1 cup pistachio nuts, shells removed and toasted

1 cup dried cherries or cranberries (or half-and-half)

Preparation

1. Place chocolate in a microwave-safe bowl, covered with wax paper on HIGH 1 to 2 minutes or until melted, stirring once. Add pistachios and cherries, stirring well. Spread on large baking sheet covered with parchment paper.

2. Refrigerate 1 hour or until firm. Break bark into pieces. Store in a tightly sealed container in refrigerator up to 1 month. Pack in decorative boxes or tins lined with wax tissue paper or colored cellophane for gift giving.
