Start the New Year Right: Green Smoothie Recipe

One of my New Year’s resolutions is to drink more Green Smoothies.  I am having so much fun with my Blendtec blender, and I loved this recipe for Green Smoothie. Even my son, Zachary, who is 10 years old, drank an entire glass. If you’re skeptical, just try it. It’s my newest favorite recipe for breakfast or afternoon pick me up.

Celebrate Mardi Gras: Healthy Hurricane

Mardi Gras 2011 is this Tuesday, March 8.  Mardi Gras, “Fat Tuesday”, is the last day of the Carnival season as it always falls the day before Ash Wednesday, the first day of Lent. The Hurricane is a fruit-colored relative of the “daiquiri”, and it’s credited to New Orleans tavern owner Pat O’Brien. In the 1940s, he created the fruity concoction and served it in hurricane-lamp-shaped glasses to give away to sailors. The drink caught on, and it has been a mainstay in the French Quarter in New Orleans ever since. My version of the Healthy Hurricane is filled with fresh fruit juices, making it perfect for kids to enjoy. If you want an alcoholic version, see the note about how much rum to add.

Under 30 Minutes: Salmon with Pineapple-Pomegranate Salsa

If you’re looking for a dinner idea under 30 minutes, try Salmon with Pineapple-Pomegranate Salsa. This main dish is incredibly heart-healthy, pretty and filled with great flavors. This salmon recipe is truly one of my favorites. Start simply by combining maple syrup and Dijon and brushing the mixture over the fish. Top it with the easy, fresh Pineapple Salsa combination made with chopped fresh pineapple, fresh cilantro, lime juice and pomegranate seeds. When pomegranate seeds are out of season, you can substitute fresh blueberries or dried cherries. Feel free to also grill the salmon when grilling season rolls around. Enjoy this dish for a weeknight or weekend, and serve it with your favorite rice and a mixed green salad.
