If you’re looking for a super easy summer dessert, try this Peach Pecan Crisp recipe. In 45 minutes, you’ll have an a scrumptious mouth watering dessert for friends and family to enjoy. I love using two of my favorite ingredients—peaches and pecans. I typically purchase mine from Pearson Farms in Georgia. They’ve been in business since 1885 and are a wonderful, friendly family-owned business. At our house we go through peaches and pecans so quickly, so I try to always have them on hand, especially while peaches are in their peak season. If you want to prepare this recipe when peaches go out of season, feel free to use frozen peaches (be sure to thaw them slightly before serving). Peaches are so healthy for you. One fresh peach (about 21/2 inches) is only 68 calories and has zero fat. Peaches contain 10 different vitamins. A large peach provides Vitamin A, which is important to healthy vision, Vitamin C, thiamin, riboflavin, vitamin B-6, niacin, folate and more.

I’ve been using my cast-iron skillet often for desserts lately, but if you don’t have one, you can substitute a 10-inch or 2 quart baking dish. Be sure to slightly grease it before adding the peaches and brown sugar. If you don not have a 10-inch, you can also use an 8-inch as well as a 61/2-inch if you have these smaller sizes. I know it’s Passover so forgive me if you’re celebrating. I made this Fresh Strawberry Bread last week, and I could not wait to share the recipe. All you need is one big bowl–no mixer is needed. Combine all of the ingredients, except for the sliced strawberries in one bowl; mix and then fold the strawberries in gently. Even though this quick bread has bananas, it does not taste like banana bread when it’s done. The combination of the mashed bananas and nonfat plain Greek yogurt create an amazing moist texture and fantastic flavor.

Strawberries are now at their peak, and you can find them on sale at many groceries. One cup of strawberries has 50 calories, and they are packed with health benefits such as boosting your immune system, promoting eye and heart health, helping fight cancer, wrinkles, high cholesterol and so much more. Enjoy this recipe this spring and summer for breakfast, a snack or even dessert. My kids and husband went wild for us, so next time I will be making two!

Super Easy Healthy Granola Bars

My sister, Julie, called me this morning and raved about a granola bar recipe she tried from Giada’s cookbook, Giada’s Feel Good Food. I had all of the ingredients on hand so I tweaked the recipe slightly and made these Super Easy Healthy Granola Bars, which came out awesome! I used liquid coconut oil instead of the safflower oil, added additional oats and vanilla, used golden raisins and added a combination pecans and walnuts instead of just walnuts. These are a fabulous gluten free healthy breakfast or mid or afternoon snack recipe. Since my daughter does not get a lunch break at school, this is the ideal blend of protein, fiber, carbohydrates to help her energized though her day. These also make a great travel snack, so try them now and thank me later!

My mother-in-law always prepares a pecan pie for Christmas dinner dessert. My husband and I decided to step out of the classic pecan pie box, and we tried this recipe for Bourbon Chocolate Pecan Pie for Thanksgiving which was a huge hit. Start by using a frozen pie crust. I used a regular size, but a deep-dish would work well too. Brush the edges with cream to give the crust a golden color. If you only have eggs on hand, that works too. Beat the eggs slightly and brush around the edges of the crust to give a glossy crust color. If you want to omit the bourbon, you may, but it gives it an extra southern bold flavor. You may want to make two pies while you’re at it because one goes fast! Enjoy this holiday season and year round or give as a holiday gift!

We typically prepare a pumpkin pie, pecan pie, chocolate pecan pie, carrot cake, and it goes on and on. No joke! I decided to try this recipe from an old Southern Living Magazine recipe for Mini Pecan Pies, and they were a hit! I tweaked it just slightly, and it’s heavenly. Nuts and Bolts for New Years Day

Happy New Years! We are hanging out watching football today. Did you see the Texas A & M/Duke game? Wow! For New Years Day, I made this Nuts and Bolts recipe. Simple Kale Salad with Cider Vinaigrette

My three kids and I love kale so we are always experimenting with new ways to use it in the kitchen. I came up with the idea to add some sweetness, using dried cranberries and crunch with toasted pecans. Then all you need is to prepare a simple cider vinaigrette. This Kale Salad with Cider Vinaigrette is amazing, and it’s a great salad to accompany seafood, chicken or pork. Top it off with crumbled feta, goat cheese or even blue cheese. Oh, by the way, this also would make a great fall holiday recipe.

 

Small Batch Granola

One of my favorite snacks of all time is granola. When I saw this recipe for Small Batch Honey-Pistachio Granola on my dear friend, Kelley’s blog, Mountain Mama Cooks, I had to make it. My kids and I loved it, and we have made it so many times that we know it by heart. I decided to change up her recipe just slightly to make this Small Batch Granola for some last minute holiday food gifts. I substituted pecans and almonds for her pistachios, but both versions are spectacularly simple.
