Recipes for avocado toast are everywhere, a super popular healthy breakfast or lunch option. Avocado toast was actually the TOP food trend of 2015, so if you haven’t tried it or made it, where have you been? Since it’s Passover week, I made this Passover Avocado Toast since my kids were wondering what they were going to eat for breakfast that is Passover worthy (besides eggs, smoothies and smoothie bowls). This recipe takes literally 5 minutes to prepare and is probably one of the easiest recipes you’ll ever see on my website. Eat on its own or top with balsamic vinegar and olive oil. It’s also fabulous with red pepper or chili flakes. Not only are people making avocado toast at home, but you’ll find it incredibly popular on menus, especially in California and New York! Try it, you’ll be hooked. It’s so good on matzah!

Just in time for Passover, this healthy Berry Peach Smoothie recipe is perfect for breakfast, dessert or an afternoon snack. Feel free to use fresh or frozen fruit, but don’t forget frozen fruit is just as healthy as fresh. Frozen fruits are picked at their peak and then flash frozen. Kale Matzo Brei Recipe

Matzo Brei, known as matzo and eggs, is commonly eaten as a breakfast food during Passover, when only unleavened bread is permitted. This dish can be prepared frittata or omelette style, and it can be made savory or sweet. I love it with sautéed kale which I never actually have tried or even thought of before until now. This Kale Matzo Brei recipe is my newest favorite Passover favorite. It’s a great way to incorporate healthy kale into your breakfast. The best part is that my kids really liked it, and asked why didn’t I think of this before. 🙂

Passover Granola Recipe

When my friend, Amy, told me about her Passover Granola recipe, I was very intrigued. I had never heard of granola for Passover before, and I thought, “what a novel idea.” She sent the recipe to me, and I tweaked a few things, cutting down the oil and butter and adding the dried fruit bits and pecans. I was so thrilled by the results because it is truly hard to find Passover snacks and dessert ideas. Serve this Passover Granola on its own, sprinkled on top of nonfat Greek yogurt or topped with almond milk.

I am a huge fan of Greek yogurt (Fage 0% is my favorite) as you may have noticed throught my blog. Greek yogurt has 20 grams of protein per 8-ounces, 0 grams of fat and only 9 carbohydrates.

I have had lots of requests for spring recipe ideas, Gluten-Free, Passover and Easter recipes, and I thought Greek Yogurt Berry Parfaits fit in perfectly. These are so easy and only 6 ingredients. You can make them at the last minute or ahead of time. Feel free to substitute strawberries or blackberries.
