If you’re having a group of kids or adults over, or just want to make something sweet for your family, these are simple and delicious! If you’re like me, you can never have enough recipes as the holidays near. Dips and salsas are perfect for getting a party off to a great start. This Feta and Roasted Red Pepper Dip recipe is only 3 ingredients. If you have the ingredients on hand, this tasty dip can be ready to serve in about 5 minutes. Serve it with crudités, crackers or pumpernickel rounds for an elegant appetizer. Tip: Use creamy feta cheese. The lower-fat versions produce a drier dip. If your results seem dry, add 1 teaspoon or so of extra virgin olive oil and pulse.

Panko-Crusted Fish Sticks with Edamame Salsa

On a busy school night or jam-packed weekend, these Panko-Crusted Fish Sticks are a snap to prepare and one of my kids’ favorites! They taste and look so fantastic – no one will ever know they are oven-fried. And with only 390 calories and 10 grams of fat, I feel good about serving this recipe to the kids and their friends. Whether you pair them with this Edamame Salsa or chop them up for a salad, they are perfect for football parties, picnics and casual dinners! On top of it all, what I really love is that the exact measurements can be used to make fish “cakes” as well.

Kid Favorite Dessert: Easy Funnel Cakes

My oldest son, Alec, is running cross country this season which is quite the challenge. He runs 5 days a week after school (2 to 5 miles) and has a track meet almost every weekend. It’s quite impressive for a 12-year-old. At most of the meets, they sell funnel cakes so he has been begging me to come up with an easy recipe to make funnel cakes at home. We worked together to create this simple Funnel Cake recipe, and it’s really pretty tasty. I tried to make it as low-fat as possible.
