Panko-Crusted Fish Sticks with Edamame Salsa

On a busy school night or jam-packed weekend, these Panko-Crusted Fish Sticks are a snap to prepare and one of my kids’ favorites! They taste and look so fantastic – no one will ever know they are oven-fried. And with only 390 calories and 10 grams of fat, I feel good about serving this recipe to the kids and their friends. Whether you pair them with this Edamame Salsa or chop them up for a salad, they are perfect for football parties, picnics and casual dinners! On top of it all, what I really love is that the exact measurements can be used to make fish “cakes” as well.

Turkey Eyeball Spiderweb Pizza

Halloween is just a few days away, and this recipe for Turkey Eyeball Spiderweb Pizza is a great main course for Halloween night or for any of your upcoming Halloween parties. I developed this recipe for Honeysuckle White and Shady Brook Farms, my favorite turkey brands. I created a simple homemade turkey meatball with panko breadcrumbs, egg white and seasonings, and my kids were eating them as fast as I could make them. They are delicious on top of this super easy pizza using an unbaked pizza crust and your favorite marinara or pizza sauce. These pizzas are so fun to decorate for Halloween. My daughter had so much fun helping me with the spiderweb design. Happy Halloween weekend!

Since I was born and raised in the south, I can honestly say I have tried a lot of great fried foods. Over the years, I have worked hard to lighten some of my favorite southern dishes. These Panko-Crusted Fish Sticks have to be one of my favorites. When I made them recently, everyone was raving about them and begged for the recipe. Not only because they were so pretty, but the flavor was out of this world. I served them with this simple sauce, and dinnertime was a hit. These make a great appetizer or main dish for anytime during the year. This recipe also works great with chicken, cut into thin strips.

Low-Fat Panko-Crusted Fish Tacos in Under 30 Minutes

I love fish tacos, and one of my favorites, in town is at the Cantina Restaurant. They have incredible tacos (really everything is great there), and so I thought I would try to match their recipe. OMG good!

This has been an exciting month for me. Probably the most exciting month ever for many reasons. I can’t say too much yet about some of my “big” news. Mine and My Dad’s Favorite: Eggplant Parmesan

I take after my dad in many, many ways. He tells me that often, especially lately. I have to admit, it’s a compliment because he is one of the nicest people in this world . One of his favorites (and mine too) is Eggplant Parmesan. My youngest child, Zachary, loves it as well. This recipe is really simple and light. It’s under 300 calories and 9 grams of fat so enjoy.

Family Favorite: Homemade Spaghetti and Meatballs

I made Homemade Spaghetti and Meatballs last night, and my kids went nuts over it. For some reason, they acted like I had slaved in the kitchen all day. They were so impressed! This recipe is a breeze. It’s true comfort food for the first week of school. Feel free to substitute ground turkey if you prefer. 

Salmon Sliders with Caper Mayonnaise

I love sliders, as many of your know since I feature them a lot on my blog. I am taping a “Slider” cooking segment for NBC 13 “Daytime Alabama” tomorrow, and I thought a Salmon Slider would be fabulous paired with two other beef slider recipes. This recipe is really easy and delicious. It uses canned salmon but fresh salmon works great as well. Enjoy and stay tuned to the air date on NBC 13.

College Student Recipe Idea: Panko-Parmesan Chicken Fingers

On Thursday evening, I am teaching a college cooking class, and I am preparing a recipe for Panko-Parmesan Crusted Chicken, a salad, an appetizer and a dessert. This is a great substitute for fried chicken, and it’s lower in fat while still crispy and delicious. Panko breadcrumbs are Japanese-style breadcrumbs which are coarser in texture and provide a wonderful crunch and flavor to main dishes. They are usually found in a box in most grocery stores where breadcrumbs are sold.
