8 Healthy Gluten-Free Tailgating Recipes

Happy first college football weekend! I have had so many friends asking for tailgating recipes this week, so I decided to compile a list of recipes starting with my Chipotle Vegetarian Chili. Since I have been eating mostly gluten-free lately, I thought I would share 8 healthy Gluten-Free tailgating recipes for this football season. With Alabama playing in Dallas tonight and Auburn playing in Atlanta, it’s a big night for our state. I have been trying a lot of new gluten free recipes lately, and I really feel great when I follow a gluten free diet. I don’t eat gluten free always, but I know many of you have allergies or use the paleo diet. Here are 7 fantastic gluten free recipes that I just had to share. No-Bake Nutella Oatmeal Cookies

I made these No-Bake Nutella Oatmeal Cookies a few weeks ago, and they were too good to be true. Not only are they a “No-Bake” cookie recipe, but they are filled with my favorite ingredients: Nutella, peanut or almond butter, dark cocoa powder, oats and almond milk. These are an ideal afternoon gluten-free snack or dessert. I think I definitely need to make a batch for Mother’s Day.

No-Bake Mini Healthy Bites: Gluten-Free and Passover

I love to experiment with “No-Bake” cookie recipes, especially those that are gluten-free, Paleo Diet or perfect for Passover which starts this week. I was excited to make this recipe for No-Bake Mini Energy Bites which I made and tweaked from a recipe I saw on the blog, “Gimme some Oven”.  Her recipe is great, but if you want a Passover or gluten-free version, try grinding your favorite nuts and omitting the oatmeal. These are incredible, and I honestly could not keep my hands out of the container. My 3 kids had absolutely no idea there was flaxseed in them. Feel free to use almond butter instead of peanut butter and any of your favorite nuts.

Gluten Free: Grain-Free Granola

One of my food weaknesses is definitely granola so I thought I would develop a recipe for a Grain-Free Granola for all of those who can’t have grains, are gluten-free, are following the Paleo Diet or are watching their carbohydrate intake. This recipe for Grain-Free Granola is super easy to make, and it’s full of my favorite seeds and nuts. Feel free to use whatever you have on hand as all of the nuts and seeds are easily interchangeable. This granola makes a great breakfast idea stirred into nonfat Greek Yogurt or with almond milk. It also makes a great afternoon snack, a healthy sweet to put in your children’s lunch, or a wonderful dinnertime dessert served with fruit.

Gluten-Free Main Dish: Balsamic Chicken with Pine Nuts

I am so excited about sharing this simple, healthy main dish. In under 30 minutes, this recipe for Balsamic Chicken Cutlets makes a great healthy weeknight or weekend entree. This recipe is perfect if you’re following a gluten-free, Paleo or low carb diet. Pine nuts are a great source of protein, dietary fiber, magnesium and iron, and they add great flavor and crunch to this easy recipe.

No-Bake Paleo and Gluten-Free Cookies

These No-Bake Paleo Cookies were introduced to me by my friend, Tanya, who has been having success with the Paleo Diet. What I love about these cookies is that they are gluten free, high in omega 3 fatty acids, and best of all, taste great. This recipe is great if you’re on a gluten-free diet, trying to eat low carbohydrates or following the the Paleo Diet, which is based around eating quality sources of protein, fresh fruits, vegetables, lean meats, seafoods, fats high in omega-3 and low-glycemic carbohydrates. This is a low-carb diet which omits refined sugars and grains, dairy, trans fats, salt, high-glycemic carbohydrates, and processed foods.
