Everyone loves oatmeal at my house, so I thought I would make my life easier by making this Overnight Apple Pie Oatmeal. With only 5 minutes of preparation time, this tasty breakfast is a ready when you wake up in the morning (the kitchen smells amazing too). Feel free to use your favorite apples and add honey, nuts, flaxseed or dried fruit to top off your morning oatmeal, but it’s also so good on its own. It’s back to school season, and we are trying to be super healthy! Treat your kids, their friends, the class, and/or  the teachers to a new cookie recipe from House Foods Tofu. 5 Breakfast Recipe Ideas for Back to School

I know you have heard it a million times, but breakfast is the most important meal of the day. Breakfast is even more important for those parents with kids, especially since school is starting. Ours starts tomorrow, and I can’t believe it! Plenty of healthy breakfast ideas exist for the whole family to enjoy so it makes it easier on everyone. Here are the 5 breakfast recipe ideas for back to school:

1. Smoothies-Who doesn’t love a fresh fruit smoothie? You can buy a huge variety of smoothies off the shelves in supermarkets, but can often be high in sugar. If you want to ensure that your kids are getting all the vitamins and minerals they need, create their favorite smoothie before school. Try my Three Ingredient Banana Smoothie.

2. Bagel, Smoked Salmon and Cream Cheese- Kids get bored of toast, so mix it up by offering them a bagel instead. You can get all sorts of different flavors. Try my recipe for Smoked Salmon Dip that works great as a breakfast spread.

3. Cereals-Children tend to tire of eating the same thing, so while healthy cereals such as granola are a great option, make sure you have plenty of variety. You can alternate different cereals and add fruit and/or Greek yogurt to offer something new each day. Try my Blueberry Yogurt Parfait.

4. Eggs-Eggs are a great source of protein, and my kids love this recipe for Oatmeal with Egg Whites that has a good source of protein and carbohydrates.

Oatmeal Chocolate Chip Pecan Pie: Thanksgiving Dessert

I can’t believe Thanksgiving is next week! I wanted to share with you my newest favorite Thanksgiving dessert: Oatmeal Chocolate Chip Pecan Pie. It’s so easy to prepare with only 15 minutes of  hands-on time. Adding Oatmeal to this pie makes it a little bit healthier and gives the texture a twist. My three kids are in love with this dessert so I’ll be making several for Thanksgiving and Christmas. Feel free to use dark chocolate chips instead of semisweet if you wish. Trust me, you will love this Thanksgiving dessert! Happy holidays everyone!

No-Bake Mini Healthy Bites: Gluten-Free and Passover

I love to experiment with “No-Bake” cookie recipes, especially those that are gluten-free, Paleo Diet or perfect for Passover which starts this week. I was excited to make this recipe for No-Bake Mini Energy Bites which I made and tweaked from a recipe I saw on the blog, “Gimme some Oven”.  Her recipe is great, but if you want a Passover or gluten-free version, try grinding your favorite nuts and omitting the oatmeal. These are incredible, and I honestly could not keep my hands out of the container. My 3 kids had absolutely no idea there was flaxseed in them. Feel free to use almond butter instead of peanut butter and any of your favorite nuts.

Start the Day Off Healthy: Oatmeal with Egg Whites

It’s a busy week ahead for me including with radio show on Magic 96.5 this Wednesday as well as a nutrition seminar this weekend at Bikram Yoga Birmingham. For both events I’ll be talking about “Healthy Eating Tips” to get your new year off to the right start. One of my top tips is to never skip breakfast. If you like oatmeal for breakfast, you’ll love this recipe for Oatmeal with Egg Whites. This simple combination is something my friend, Kelly, of Hulsey Gardens, told me she eats daily. I made mine with a touch of brown sugar and blueberries. Kelly normally adds 1 tablespoon of pureed pumpkin, 1 teaspoon of pumpkin pie spice and 1 teaspoon vanilla to hers. Adding sliced strawberries and ground cinnamon is also delicious. Regardless, this is one healthy breakfast recipe that has the perfect mix of protein, fiber and carbohydrates, and it is a great way to start your day and new year on the right foot.

Summer Dessert Comfort Food: Peach-Blueberry Crisp

I’ve been searching for a great crisp recipe using fresh peaches and blueberries that I bought yesterday from the farmer’s market. My sister just recently purchased Emeril’s book “20-40-60 Fresh Food Fast”, and showed me his recipe. I adapted his recipe just slightly reducing some of the butter and using whole wheat flour. It came out great! Enjoy the peak of delicious summertime fruit with this comforting dessert.

Easy Peach Cobbler with Steel Cut Oats Topping

If you ever get the chance to try Chilton County peaches from Alabama, you’ll relish in their fabulous juicy fresh taste. We had a basket of fresh peaches so I decided to make a simple cobbler with ingredients I had on hand. I love oatmeal in my cobbler toppings, but all I had was steel cut oats. It worked great! Serve with vanilla ice cream or whipped cream for an added touch.

I made these the other day just when three of my oldest son, Alec’s friends walking through the door, and they were so excited to have hot, fresh cookies out of the oven. When I told them they were low-fat, they said, “No way!”
