I am a huge peanut butter fan so I have had my eye on making these No Bake Peanut Butter Cups for quite some time. I saw this recipe on Fifteen Spatulas blog a while back, and my daughter, Leigh and I finally had some time to whip them up. These are simple to prepare and a great no bake dessert recipe. They are also gluten-free! We made ours into tiny bites, and one is plenty to satisfy your peanut butter and chocolate craving. Enjoy!

When Birmingham Magazine asked me for some dog treats for my monthly food column, I wasn’t sure what to do. Honestly, this is not my area of expertise. I contacted our wonderful veterinarian, Andy, and I asked him to name a couple of ingredients which I could use to develop a cookie that would be good for dogs. I created these No-Bake Dog Treats which are great for people too. These came out fabulous, and my dog, Latte, loved every one of them. Note: For overweight dogs, these should be a “splurge” snack.
I made these No-Bake Nutella Oatmeal Cookies a few weeks ago, and they were too good to be true. Not only are they a “No-Bake” cookie recipe, but they are filled with my favorite ingredients: Nutella, peanut or almond butter, dark cocoa powder, oats and almond milk. These are an ideal afternoon gluten-free snack or dessert. I think I definitely need to make a batch for Mother’s Day.
