6 Healthier New Years Recipes

Healthier New Years recipes, yes it’s true! New Years Eve has snuck up on me this year, and I am still not sure of my New Years plans yet I typically make a really nice dinner at home with some wine and/or champagne, a great appetizer, entree and nice dessert. I have been working on some healthier New Years recipes this year as you’ll see below my developed recipes for SC Johnson,  Fitness Republic, Momspark and of course, Ingredients, Inc. starting with my Pear Pecan Crostini Recipe from Ingredients, Inc. Here are some of my top healthy lifestyle tips that I am going to try to stick to in 2016:

  1. Do not skip breakfast!
  2. Drink more water.
  3. Eat more color: more vegetables and fruits everyday in orange, green, yellow, purple, red and white
  4. Do more yoga
  5. Live in the moment and be more mindful.
  6. State gratitude: Write down or say to myself three things I am grateful for every day.
  7. Exercise including cardio and weight training
  8. Read more
  9. Step out of my comfort zone more often
  10. Keep on traveling

Are you still trying to stay on track eating healthy and working out since the new year began? We are! I am trying to make sure my 3 kids eat more fruits and vegetables, and these Vegetable Kabobs have been a winner as a side dish at our dinner table. I used Ranch seasoning mix with olive oil for the marinade, and also make a yogurt ranch dip to go with them. You can use store-bought Ranch if you have it, but if you have time the recipe for homemade ranch is easy. It’s listed below. Just combine all the ingredients and store covered in the refrigerator. Enjoy!

1 (6 oz.) container nonfat plain Greek yogurt

5 tbsp. nonfat buttermilk

2 tbsp. chopped fresh parsley

1 tbsp. chopped fresh chives

1/4 tsp. grated lemon zest

2 tsp. Ranch seasoning mix

New Year’s Eve Appetizer: Chicken-Chipotle Dip

If you’re looking for a super easy appetizer for New Year’s Eve, Super Bowl Party or just any occasion, I have one for you. This Chipotle Chicken Dip is one of my newest favorite lightened up appetizer recipes. Take a shortcut by using a rotisserie chicken and add light cream cheese, nonfat Greek yogurt, green chilies, chipotle seasoning. Serve it with your favorite whole grain crackers, pita chips or fresh vegetables, and you’ll have a crowd favorite.

Lightened-Up Seafood Gumbo

Happy New Year to everyone! We spent the past few days down at the beach, and yesterday we watched a lot of football and enjoyed this Seafood Gumbo recipe adapted from Cooking Light. With only 254 calories and 2 grams of fat, this hearty soup will fit into your New Years resolution plan to eat healthy and get lean. It’s so flavorful and comforting this time of year. Just serve with a salad and some crusty bread, and that is all you need. I hope everyone had a great holiday season, and I look forward to a fantastic 2011 on Ingredients, Inc.

Seafood Gumbo

Yield: 8 servings

Ingredients

1 cup all-purpose flour

1 teaspoon vegetable oil

2 cups chopped onion

1 cup  chopped green bell pepper

1/2  cup chopped celery

2  garlic cloves, minced

11/2 cups sliced okra

1 cup chopped tomato

2 teaspoons chopped fresh oregano

1 1/2 cups low-sodium chicken broth

1 teaspoon Cajun seasoning

4  (8-ounce) bottles clam juice

2 tablespoons tomato paste

1/2 pound skinned scamp or other firm white fish fillet, cut into 1-inch pieces

11/4  pounds medium shrimp, peeled and deveined

1/2  teaspoon hot sauce

4 1/2  cups hot cooked long-grain rice

Directions

1. Place flour in a 9-inch cast-iron skillet; cook over medium heat 20 minutes or until browned, stirring constantly with a whisk. (If flour browns too fast, remove it from heat, and stir until it cools down.) Remove from heat; set aside.

2. Heat oil in a large Dutch oven over medium heat. Add onion, bell pepper, celery, and garlic; sauté 8 minutes or until vegetables are tender. Add okra, tomato and oregano; cover and cook 5 minutes, stirring occasionally. Add 11/2 cups chicken broth, Cajun  Seasoning, clam juice, and tomato paste. Bring to a boil. Gradually add browned flour, stirring with a whisk. Reduce heat; simmer, uncovered, for 45 minutes, stirring occasionally.

3. Add scamp; cook 5 minutes. Add shrimp; cook 10 minutes or until seafood is done. Stir in hot sauce. Serve gumbo over rice.

Note: One (8-ounce) container select oysters, undrained, may be added.
