6 Healthier New Years Recipes

Pear Pecan Crostini

Healthier New Years recipes, yes it’s true! New Years Eve has snuck up on me this year, and I am still not sure of my New Years plans yet I typically make a really nice dinner at home with some wine and/or champagne, a great appetizer, entree and nice dessert. I have been working on some healthier New Years recipes this year as you’ll see below my developed recipes for SC Johnson,  Fitness Republic, Momspark and of course, Ingredients, Inc. starting with my Pear Pecan Crostini Recipe from Ingredients, Inc. Here are some of my top healthy lifestyle tips that I am going to try to stick to in 2016:

  1. Do not skip breakfast!
  2. Drink more water.
  3. Eat more color: more vegetables and fruits everyday in orange, green, yellow, purple, red and white
  4. Do more yoga
  5. Live in the moment and be more mindful.
  6. State gratitude: Write down or say to myself three things I am grateful for every day.
  7. Exercise including cardio and weight training
  8. Read more
  9. Step out of my comfort zone more often
  10. Keep on traveling

Nuts and Bolts for New Years Day

Happy New Years! We are hanging out watching football today. Did you see the Texas A & M/Duke game? Wow! For New Years Day, I made this Nuts and Bolts recipe. This super easy snack mix is ideal for football games, Super Bowl sunday and March Madness. My kids can’t stop eating it, so I assume that is a good sign. Happy New Year and here’s to a healthy, happy New Year! May all your wishes and dreams come true!

Champagne Cupcakes for New Years Eve

Happy Christmas week! I wanted to share these Champagne Cupcakes for New Years Eve made with champagne, orange juice and orange zest. I used  Golden Blossom Honey which is family owned and has operated since 1921. Golden Blossom Honey is  100% American-made product and their signature patented blend is composed of three flowers — extra-white clover, sage buckwheat and orange blossom. Happy holidays everyone!!

Glazed Maple Pecan Oatmeal Scones and Last Minute Gift Idea

We love maple syrup at our house! Especially my daughter, Leigh. These Glazed Maple-Pecan Oatmeal Scones are amazing and would be fabulous for Christmas morning. I love using the certified organic Crown Maple Syrup that is produced in New York. This brand is gluten-free and contains no GMO’s or preservatives. Here are some last minute Christmas gift ideas that will please any home cook.

Medium Amber – experience aromas of gingerbread and roasted chestnut with flavors of rye, butterscotch and spice. Perfect pairings: baked bread, ginger cookies and chocolate. For cocktails – heavier spirits are ideal, such as bourbons that have seen many years of barrel age, or Scotch that has heavy smoke and peat. Also provides a decadent topping to chocolate or vanilla ice cream. (12 oz. bottle, $16.95) Available online here.

Crown Maple Gift Ideas:

Petite Trio – features a sampling of the light, medium and dark ambers in a handsomely packaged Royal Treatment box. Think of it as a ‘flight’ of pure maple syrup. (3 bottles – 1.7 oz. each, $15.95) Available online here.

Almond Butter-Flaxseed Pancakes

Since I have been obsessed with almond butter for quite some time, I thought I would try my hand at making these Almond Butter Flaxseed Pancakes. You combine almond butter with your favorite homemade or store-bought pancake mix, flaxseed meal (which can be found at most local groceries), banana and even nonfat Greek yogurt. My kids went nuts over these, and I felt great serving them such an incredibly healthy breakfast. They called them, “Banana-Nut Pancakes” which was a great name. These pancakes taste great reheated, and they make a great healthy afternoon snack. Enjoy anytime of the year, but they are perfect for a healthy Christmas break, New Year’s or weekend breakfast.

Perfect New Years Dish: Easy and Low-Fat Beefy Hoppin John

IMG_2883

Beefy Hoppin John is perfect for New Year’s Day. I developed this recipe for Laura’s Lean Beef, and it’s only 318 calories per serving and 4 grams of fat per serving. It’s really simple to prepare with only 10 minutes of preparation time. Please excuse me for not supplying a picture of the recipe, but my camera and computer has been on the blink this week.
