Hot Artichoke Dip with Black Eyed Peas

Artichoke Dip is just about everyone’s favorite appetizer recipe, and I am always looking for ways to turn and twist it to make it different. This Black-Eyed Pea-Artichoke Dip combines artichokes, bacon, black eyed peas, Greek yogurt, reduced-fat mayonnaise and mozzarella cheese to create a warm dip that’s perfect for this time of year. I served this on New Year’s Day, and I thought it would be a perfect addition to anyone’s list to serve on Super Bowl sunday.

Healthy and Flavorful Stuffed Baked Potatoes

IMG_2890

Sometime it feels like sides dishes get left out, and people ask me all the time for side dish ideas. These Stuffed Potatoes are low-fat and easy to make. The touch of Greek Yogurt and Gruyere add great flavor and texture. They go perfect with meat, fish or pork, and best of all, the kids love them. See me on Thursday 11:30 central time on NBC 13 “Daytime Alabama” making a few of my favorite side dish recipes.

Martha Stewart Cookbook Winner

IMG_2612

I have been out of touch this week looking at some of the beauty like you see here, but I’m on the way back and would love to announce the winner of the “Martha Stewart Dinner at Home” cookbook. The winner is Kathryn who said, “This website was suggested to me just in time. I was nearly a total loss as a cook! Tight on time, weird ingredients and one too many noses turn up at my latest attempt to appease three kids frustrated us all. Alas, we began with the ribs and are happily eating our way through your blog. We’re in!” Thanks to all of you who participated as I loved hearing your comments. I have a busy week ahead shooting 4 shows next week for NBC 13 “Daytime Alabama”, a cooking class next week at Birmingham Bake and Cook and TV in Nashville in early December. Not to mention, Thanksgiving at my house. Glad I had a few days of rest.

Incredibly Easy Blueberry French Toast

Blueberry French Toast

This recipe is perfect for this time of year when spring brunch celebrations are upon us. When we have family brunches, I am always  asked to make this version of Blueberry French Toast. It’s my niece, Jamie’s, favorite, as well as my kids. This recipe is a breeze and can be done overnight. Just see the directions under “preparation” below. It can also be done with strawberries or even bananas in the middle of the cream cheese layer. I love to use Challah bread, but if you can’t find that, use a good French bread.

Look for me today on The NBC 13 show in Birmingham “Daytime Alabama” at 11:30 central time in Birmingham. I will post the link next week for those of you who are outside the viewing area.
