Mother’s Day: Shrimp Cones with Spicy Yogurt Sauce

Most of you already know that I am a huge yogurt fan. I grill all year long, but my family especially loves it when the weather turns nice. We tend to eat outside on the deck, and it’s great for the kids to be riding bikes and playing basketball while I’m cooking the food on the grill. This is the epitome of family time. These Mahi Mahi and Vegetable Kabobs are the perfect recipe to try if you’re wanting to get your kids to like fish and vegetables. It’s colorful, fresh and full of clean flavors. Mahi Mahi is mild, a low calorie, low-fat source of protein, and it also has B-complex vitamins, selenium and omega-3 fatty acids. Serve these kabobs with grilled asparagus or squash and zucchini this Easter or Passover dinner for something different and unexpected. It’s a healthy low carbohydrate main dish.

Tomato, Fresh Herbs and Feta Crostini for Mother’s Day

Since Mother’s Day is this weekend, I thought I would share a super easy recipe from my new cookbook, “400 Best Sandwiches: From Burgers & Classics to Wraps & Condiments”. These Tomato, Fresh Herbs and Feta Crostini would be considered an open-face sandwich and a simple spring appetizer that is pretty, fresh and versatile with a brunch, lunch or dinner menu. I am making this recipe today along with 4 other recipes on Nashville’s Newschannel 5 “Talk of the Town”. My television segment will air at 11 a.m. central as well as on Comcast channel 50 at 12 p.m., 4 p.m. on Friday and 9 a.m. on Monday. Spring is Here: Easy Sensational Shrimp Salad

When I was at the beach last week, I ate a Georges in Alys Beach, and there were wonderful spring salads on the menu (I ate there 3 times). This great food made me want to do a television segment on great spring salads. Today I taped several segments for NBC 13 “Daytime Alabama”. My version of Sensational Shrimp Salad was one salad I made, and they loved it! I took a shortcut and used already cooked, peeled and deveined shrimp. The flavors of white wine vinegar, fresh dill and Dijon mustard create a fresh and light dressing mixture for the shrimp. I will let you know the day the show will air, but here’s the recipe early.
