Skillet Blueberry Cobbler

Blueberries are at their peak season right now with most grocery stores selling them buy one get one free. I made this Skillet Blueberry Crisp on Sunday night, which only takes 10 minutes of preparation time. It’s so easy, healthy and tastes fantastic! My husband said this blueberry crisp was so good that it did not even need vanilla ice cream (or frozen yogurt to top it off). If you have some on hand and want that cold and warm temperature combination, feel free to add it. I used my 61/2-inch cast-iron skillet, but if you only have the larger one, you can double the recipe. Blueberries are also healthy for you. In only 80 calories per cup and virtually no fat, blueberries offer many nutritional benefits. They are packed with Vitamin C and are a good source of manganese (which is important in bone health). Blueberries have antioxidants that can improve vision and promote quicker adjustment of the eyes to darkness. They can also improve memory and reduce the risk of infections. They have high levels of compounds that help widen arteries and can help blood flow. Blueberries are also a good source of fiber, and they have phytonutrients that protect cells from damage. This recipe is great to serve to kick off summer, and it will be awesome to serve on Memorial Day and Fathers’s Day too!

I decided to turn this healthy side into a salad with grilled vegetables and quinoa with this Grilled Ratatouille Salad recipe. This gluten-free and vegan recipe is perfect for a weeknight summer dinner or weekend lunch. I am actually serving this alongside grilled steaks this Memorial Day weekend. It’s three of my favorite things: healthy, flavorful and beautiful!

Happy May and Cinco De Mayo! I am finally back from Italy, and now is the time to spice it up for summer entertaining just in time for Mother’s Day, Memorial Day, graduation, lake and beach parties. I made this Taquito Layered Dip today when I was having some friends over, and I saved a ton of time by using Chicken Taquito’s by Jose Ole. Feel free to use the chicken or steak varieties, and add your favorite southwestern toppings such as black olives, cilantro, avocado or jalapeños. You can also make your life simpler (and sometimes save money) using frozen foods to create fabulous appetizers, main dishes and even desserts. I can’t believe summer is here, but I am so glad. I have been ready for the kids to be out of school, and for all of the cool, fresh summer dishes, such as this Marinated Shrimp recipe. For a refreshing summertime dessert, try Watermelon-Lime Granita. This is so easy and only 3 ingredients. How could you go wrong? Van from Boutwell Studios asked me on a podcast I did recently for Birmingham Magazine what he could do with his leftover watermelon. I thought this was a fabulous recipe to share. It’s so cool and refreshing and the perfect combination of watermelon and lime. My kids loved it!
