I received an ice cream maker for one of my wedding presents, and the kids and I are obsessed with it! My husband’s mom makes homemade ice cream for every holiday, so I had to step up my non ice cream making abilities  and learn the craft. This Oreo Ice Cream recipe is one of my first creations. This recipe is so easy with only 10 minutes of preparation time, and it can be made several days in advance. Substitute your favorite chocolate chip cookie or candy bars for the Oreos if you wish. Strawberries are also the star of this recipe which are filled with antioxidants and said to rival spinach in their health benefits helping protect the heart, aiding in reducing cholesterol, boosting the immune system and reducing risks of cancer, arthritis and even gout. Free free to add some of your favorite toppings, granola, hemp seeds, unsweetened coconut, you name it. It’s our last day of school today-YAY! I thought I would share this Tofu Strawberry Shortcake recipe for a healthy dessert to kick off the summer this Memorial Day Weekend using Organic Tofu to make a fabulous tofu cream (with pure vanilla, maple syrup and almond milk too). Grilled Ambrosia

One of my kids favorite things to eat is grilled pineapple. Recently, I made this Grilled Fruit Salad, and it was devoured before I could turn around. This is an ideal healthy dessert option for Memorial Day, Father’s Day, baby or wedding showers, brunches or a light snack or dessert. Adding the coconut gives it a new twist similar to ambrosia, an old Southern favorite. Cool and Crisp: Watermelon-Lime Granita

For a refreshing summertime dessert, try Watermelon-Lime Granita. This is so easy and only 3 ingredients. How could you go wrong? Van from Boutwell Studios asked me on a podcast I did recently for Birmingham Magazine what he could do with his leftover watermelon. I thought this was a fabulous recipe to share. It’s so cool and refreshing and the perfect combination of watermelon and lime. My kids loved it!

Individual Pineapple-Upside Down Cakes

Since the buzz is that April 20th is “National Pineapple Upside-Down Cake Day,” I thought I would celebrate. The recipe for the cake part comes from Cooking Light, but I’m giving it a little twist (which is what I do best). I saw this cool, individual pan  (see below) to make individual Pineapple Upside Down Cakes. It gives this retro dessert new life. This pan is awesome and so fun and simple to use. Retro or not, this is a yummy dessert that everyone loves.
