School is back in full swing…already!  No matter what age your kids are (mine are 13, 15 and 17), school mornings can be hectic. I needed a healthy back-to-school breakfast recipe, so I came up with this Pineapple Mango Smoothie recipe. This recipe starts with frozen fruits from Dole which make this smoothie recipe quick and simple (no chopping, no washing, and there is also no need to use ice). It has vitamins and minerals as well as protein which will help keep your kids fuller longer throughout the morning. Frozen fruits are picked at their peak of freshness, from the moment they are harvested so they are just as healthy as fresh. They are a great value and portioned which makes them great for snacking and quick recipes (and less waste). Mango Smoothie Recipe with Greek Yogurt: Kid Friendly

Lately, I have been making a ton of  smoothie recipes for my kids as the weather is changing, and we are trying not to get sick. This Mango Smoothie made with frozen Greek Yogurt is my newest favorite. I am so excited to find Adonia frozen Greek yogurt by Ciao Bella. We added frozen mango chunks by Dole (which are a great healthy snack), and I combined them with the Mango Frozen Yogurt and almond milk to create an incredibly fabulous refreshing smoothie. A 1/2 cup of the frozen Mango Yogurt contains 9 grams of protein, 24 grams of carbohydrates, 0 grams of fat and 130 grams calories. You can feel great about eating it as a dessert or afternoon snack. Halibut with Mango and Goat Cheese

Grilling in the summer is the norm at my house. Lately, I have really been trying to get my kids to eat more fish. This Halibut with Mango and Goat Cheese recipe is one of my newest favorite creations that they really liked (can you say no leftovers?).  The combination of maple syrup and Dijon mustard flavors the fish to perfection, and it goes great with the sweet and savory mango topping made with fresh mangos, parsley, lime juice and goat cheese. This makes a great weekend night family dinner or weekend idea for entertaining with friends. Serve with a tossed salad and grilled asparagus or grilled okra for a healthy summery meal in under 35 minutes.

We love smoothies at my house, and my daughter, Leigh, makes them all of the time. These Strawberry-Pineapple Smoothies have been a hit in a lot of kid’s cooking classes I have taught recently. This photo was styled by Lillian, the 7-year-old who I taught a private cooking class with after she prepared the recipe. It’s so simple and refreshing, perfect for breakfast, healthy afternoon snack or dessert. It’s also wonderful after the holidays are over when you want something light, filling and healthy.
