Homemade Tomato Sauce

Ripe tomatoes are too good this time of year, so it’s a fabulous time to make fresh Homemade Tomato Sauce. My kids love pasta for dinner, and I feel great giving them a homemade sauce filled with no preservatives, sodium or additives. Two out of three of my children will eat raw tomatoes, but all three of them will devour this. Tomatoes are a great source of lycopene, a carotenoid associated with tomatoes’ red color. Lycopene is full of antioxidants which are wonderful for bone health, protection against heart disease, inflammation and cancers. Tomatoes are also a great source of potassium, folic acid, Vitamin C and Vitamin E, so dig in!

Easter or Passover Main Dish Idea: Mahi Mahi and Vegetable Kabobs

I grill all year long, but my family especially loves it when the weather turns nice. We tend to eat outside on the deck, and it’s great for the kids to be riding bikes and playing basketball while I’m cooking the food on the grill. This is the epitome of family time. These Mahi Mahi and Vegetable Kabobs are the perfect recipe to try if you’re wanting to get your kids to like fish and vegetables. It’s colorful, fresh and full of clean flavors. Mahi Mahi is mild, a low calorie, low-fat source of protein, and it also has B-complex vitamins, selenium and omega-3 fatty acids. Serve these kabobs with grilled asparagus or squash and zucchini this Easter or Passover dinner for something different and unexpected. It’s a healthy low carbohydrate main dish.

Chipotle Vegetarian Chili Recipe

It’s the time of year when I like to make a lot of soups, and chili, of course. This Chipotle Vegetarian Chili recipe is one of my newest favorites filled with black beans, corn, fresh vegetables, and chipotle peppers. I used the canned chipotle peppers, and they are great. Just don’t go overboard and add too many. You can always add more, so start with one or two and a little bit of the sauce. The peppers and a little beer add a wonderful spicy and smokiness to this chili, but this recipe is still very healthy and low in fat. It’s perfect for an easy weeknight dinner or for casual entertaining.

Easy and Healthy Beef and Broccoli

My three kids love Asian flavors. This easy and healthy Beef and Broccoli recipe is a hit every time that I make it. It’s so quick to prepare using very simple-to-find ingredients. I love using skirt steak as it’s very tender after being simply marinated with honey, fresh ginger, reduced-sodium soy sauce, sesame oil, garlic and red pepper flakes. Just marinate the steak for an hour or overnight, and dinner is on the table in less than 30 minutes. This dish is perfect for busy weeknights. I served with rice and some edamame beans, and everyone loved it (and was full).
