My son, Zachary, asked after school today if we were having chicken again tonight. I told I made something he’s going to really like, a new pasta dish with a homemade Crockpot Turkey Spaghetti Sauce. It’s so easy! Start browning the ground turkey with Italian seasoning. Then, add the remaining ingredients. Set the timer on your crockpot for 4 or 7 hours (depending on when you’ll be home) and that is it. I was so excited to use the new Organic Hunts Diced Tomatoes, Sauce and Tomato paste. 43% of consumers are trying to include organic foods in their diets, and Hunts does a great job creating tomatoes with fantastic flavors. Hunts cans each tomato for their sauces and whole and diced tomatoes within hours of picking them from the field. This flash steaming process is only done with water so these are products are super fresh! This recipe can also be made with ground beef, chicken or pork. Toss with your favorite pasta; serve with a salad and call everyone to the table for dinner.

Blueberry Pancakes for Mother’s Day

What a week… I can’t believe that a week ago I buried my mom, and tomorrow it’s Mother’s day. It’s been such a rough week, but I have so many of you to thank for the sweet messages, notes, emails, calls, flowers, comments, lunches, etc. I am trying to pick myself up every day and move forward, and this blog is one great way to push me to do that. I thought I would share a super simple recipe for Blueberry Pancakes for Mother’s Day or any day since my mom always loved Mother’s Day brunches and who doesn’t love pancakes and blueberries?

No-Bake Nutella Oatmeal Cookies

I made these No-Bake Nutella Oatmeal Cookies a few weeks ago, and they were too good to be true. Not only are they a “No-Bake” cookie recipe, but they are filled with my favorite ingredients: Nutella, peanut or almond butter, dark cocoa powder, oats and almond milk. These are an ideal afternoon gluten-free snack or dessert. I think I definitely need to make a batch for Mother’s Day.
