It’s been so bitterly cold lately so I have been looking for some great new soup recipes to try (especially ones with quinoa). I have been getting so many questions at all of my recent health/wellness speaking engagements about lean proteins. Since people tend to forget about turkey (except during Thanksgiving), how about cooking turkey tenderloins? This recipe for Blackberry Glazed Turkey Tenderloin Salad is a 30 minute, simple recipe that is fresh, fast and pretty. The most difficult part is turning on the grill. The barbecue sauce, paprika and blackberry preserves add great flavor to the turkey. Enjoy the turkey sliced over a salad (such as above) or paired with grilled asparagus and a quinoa side dish for a healthy dinner.

We have been eating a lot of cold dishes lately since it is beyond hot here in Alabama. I love trying new versions of chicken salad, and this Greek Chicken Salad is so easy and so flavorful. I used rotisserie chicken to make this recipe even easier. Serve on lettuce leaves or in a pita for a really simple main-dish.

Healthy, Easy Side Dish: Sauteed Eggplant and Tomatoes

I love making eggplant side dish recipes, and this recipe for Sauteed Eggplant and Tomatoes couldn’t be easier. I sauteed my eggplant in a good bit of chicken broth to reduce the amount of olive oil. I used garlic, red pepper flakes, organic canned tomatoes and fresh basil, and it came out wonderful. Enjoy as a perfect year-round side dish.

Healthy Protein-Packed Salad: Edamame-Corn Salad

Edamame have become increasingly popular, and my kids honestly love them. Edamame is an excellent source of low-calorie protein, fiber and even iron. This recipe for Edamame-Corn Salad is so light and wonderful using fresh ingredients such as corn, tomatoes, fresh basil and chives. It’s so easy to prepare, but you might want to double it. It goes really fast!

Gluten-Free, Low Carb and Low Calorie: Flank Steak with Tomatoes and Feta

My sister, Natalie, asked me for some main-dish dinner ideas since her two daughters are now home from college for the summer. This recipe for Flank Steak with Tomatoes and Feta is perfect for weeknights and weekends, especially since it’s grilling season (and Memorial Day is coming up). It’s so simple to prepare using fresh basil, oregano, garlic, fresh lemon juice and red wine vinegar. And who says beef isn’t healthy? Flank Steak with Tomatoes and Feta only has 185 calories, 29 grams of protein and only 2 grams of fat and carbohydrates per serving.

Fish and asparagus are two of my favorites, and this combination of ginger, soy sauce and sesame oil can’t be beat. This is a perfect healthy weeknight idea, and it’s ready in under 30 minutes.

Simple Four Ingredient Grilled Shrimp

This recipe is beyond simple. With only four ingredients: lemon pepper, shrimp, fresh lime juice and olive oil, that’s really all you need besides your favorite cocktail sauce. I used “Naturally Fresh” cocktail sauce  (which I found at Whole Foods). I am teaching a cooking class for college students in two weeks, and this is perfect for them or anyone in a hurry who wants something fresh and delicious.

Great Skillet Shrimp Supper: Fire Roasted Shrimp with Feta

I had some leftover shrimp, fresh chopped onions, zucchini and squash from the farmer’s markets over the weekend and decided to make a really easy, healthy main dish. I love cooking in the skillet and then finishing it off in the oven, and that works great with this dish which is like a shrimp vegetable lasagna without the noodles. It’s high in protein, low in carbs and delicious.
