Awesome Low-Fat, Low-Calorie Tapas/Appetizer: Steak Tomato Crostini

I had a busy week with my friends from Laura’s Lean Beef in town on their media tour stop at Health, Cooking Light and Southern Living magazines. I treated some of the food editors to some appetizers featuring Laura’s Lean Beef, and this was one of my favorites. They are only 200 calories and 4 grams of fat per serving, and Steak Tomato Crostini are fabulous. Start by combining fresh rosemary, basil, sun-dried tomatoes in the food processor and then stir in fresh roma tomatoes. Then, top the French bread with the tomato mixture, steak and blue cheese. I developed this recipe a while back, but it is a wonderful classic, especially for steak lovers.

Appetizers for March Madness or Academy Awards Night: Low-Fat Beef Nachos

Appetizers are on the rise this month with  basketball’s March Madness and the Academy Awards. If you’re looking to be “good” and not overdo it, this recipe is only 9 grams of fat per serving. Low Calorie, Low-Fat: Quick and Easy Chipotle Chili

My boys love chili, and we make it often at my house, especially this time of year. With only 248 calories and 4.8 grams of fat, this chili is low in fat and calories. I developed this recipe for Laura’s Lean Beef, but the original recipe has black beans instead of kidney beans and no chipotle seasoning. Both versions are wonderful. If you are really short on time and only have about 10 minutes, I love the Publix seasoning packet. Just add beef, tomatoes and beans, and it comes out great.

Perfect New Years Dish: Easy and Low-Fat Beefy Hoppin John

Beefy Hoppin John is perfect for New Year’s Day. I developed this recipe for Laura’s Lean Beef, and it’s only 318 calories per serving and 4 grams of fat per serving. It’s really simple to prepare with only 10 minutes of preparation time. Please excuse me for not supplying a picture of the recipe, but my camera and computer has been on the blink this week.

Low Carb and Delicious: Mongolian Flank Steak

I used to love Mongolian Beef when I was kid when my parents used to take me to our favorite Chinese restaurant. I haven’t had it in a while, so I tried to replicate the dish with flank steak and make it as low-carb and low-fat as possible. I served mine with broccoli and had some rice for the kids, and everyone was happy. Dinner Under 30 Minutes or Football Game Day Delight: Pizza Romano

I love to serve Pizza Romano for a quick weeknight dinner or even for weekend football game fare. There’s some great SEC football games this Thursday night and this weekend, so I thought I would offer up something that’s truly simple, low-fat and delicious. I love to use Laura’s Lean Beef for the beef in this recipe. Good luck to your favorite teams!

Low-Fat Beef Lo Mein in Under 35 Minutes

This recipe is as good as it looks. I developed it for Lauras Lean beef, and I recently made it for television for an Asian-themed cooking show. It is so colorful, easy and a wonderful one-dish meal. Feel free to substitute chicken, shrimp or tofu for the beef if you wish.

I absolutely love sliders which are mini bite-size hamburgers. They are perfect for appetizers, main dishes and especially the kids. I developed these California Sliders for Laura’s Lean Beef. They are a cinch to prepare and are so delicious topped with this homemade guacamole.

My brother-in-law, Eric, is always asking for hearty beef recipes. I recently developed some new recipes for Laura’s Lean Beef, and this one was really different but had such a great, unique taste. If you like coffee like I do, you will really love this recipe. 

Steak-Fresh Herb and Tomato Crostini Appetizer

Since summer is here, I like to cook appetizer recipes that are easy to prepare, delicious and perfect to serve while I’m grilling outside. This recipe works great using leftover steak, or if you want to serve a hearty appetizer, you can create this one on the grill while you are grilling the rest of your meal. I love the combination of sun-dried tomatoes and fresh plum tomatoes. If you don’t like blue cheese, use fresh Parmesan or feta cheese. I developed this recipe for Laura’s Lean Beef, and it would be perfect for the Fourth of July.
