For the apples, you can use almost any type such as Honeycrisp, pink lady or Braeburn or Granny Smith.

We are already in our second week of school. Can you believe it? No matter what age your kids are (mine are 13, 15 and 17), school mornings can be hectic. I needed a healthy back-to-school breakfast recipe that was going to make my kids smile in the morning, so I came up with these Pancake Yogurt Breakfast Bites using Kellogg’s Mini Pancakes. The frozen food aisle has become my best friend lately with so many fabulous items that are a great value and allows the busiest of people to be creative in the kitchen. Don’t forget that there are a variety of different cuisines represented on this aisle, including options that cover snack-time, breakfast, lunch, dinner, entertaining and specialty food occasions. With back to school schedules and fall activities, this aisle makes my life so much easier (and sometimes less expensive). This breakfast recipe is just a start. Feel free to add your favorite toppings such as Nutella and sliced bananas (see below)  to make something new for breakfast, an afternoon snack or dessert. Lightened Up Pumpkin Dip: Kid Friendly

Yay, it’s October, so let’s get cooking with pumpkin! Pumpkin is one of the most nutritious fruits, packed with disease-fighting nutrients such as alpha and beta-carotene, fiber, Vitamins C and E, potassium and magnesium. The carotenes found in pumpkin are potent with antioxidants, which promote healthy vision, ensures proper immune function and slows the aging process. My three kids love this dip as much as adults so you may want to make extra. Serve it with apples, pears, gingersnaps or graham crackers for an appetizer or healthy snack. It’s always perfect to make during Thanksgiving or Christmas too!

 

Date-Pecan Bread with Greek Yogurt

This Date-Pecan Bread with Greek yogurt is my newest favorite healthy, quick bread recipe. I used whole wheat and all-purpose flour, flaxseed and nonfat Greek yogurt to create a flavorful, moist bread. My kids were skeptical at first, but shortly after they tried it, they were gladly helping themselves to seconds. Perfect for breakfast, dessert, an afternoon snack or holiday gift, this recipe is a cinch to prepare (no mixer needed). I bought my dates at Costco, but you can find them at any local grocery store. Dates are filled with so may health benefits. They’re full of fiber, Vitamin B, Vitamin, A, Vitamin C, Iron and potassium. They are an excellence source of energy and work wonders for the digestive system.

Since school just started back, I am trying to start the year off right. I try to be creative and point my kids in the right direction when it comes to packing healthy lunches and providing after-school snacks that are good for them. Healthy Breakfast or Afternoon Snack for Kids and Adults: Pumpkin Muffins

We love pumpkin in anything at my house, and these Pumpkin Muffins are my kid’s favorite. I modified this recipe from Ellie Krieger’s recipe from The Food Network. I increased the spices a bit and used allspice instead of cloves. Pumpkin Muffins are perfect for an afternoon snack or quick on-the-go breakfast. These have saved me when we are flying out the door to school in the morning and to sports activities in the afternoon. Also, they are as pretty, and delicious, as they look.
