Kids Favorite Panini Sandwich

Okay. I have found my newest favorite kitchen appliance. Frigidaire’s 5-in-1 Grill and Griddle has recently launched at Target just in time for Father’s Day, wedding gifts or college graduate gifts. My kids and I are addicted to using it this summer making sandwiches such as this Kids Favorite Panini Sandwich and so many more. They can even use this on their own with minimal supervision (of course, my youngest is 12).

This panini maker is so fabulous! With two extra-large, reversible cooking plates and independent, dual-temperature controls, you can cook panini’s for two or burgers for six on this easy-to-use appliance. An innovative open-flat design is perfect for cooking pancakes and bacon simultaneously – or fold it to cook everything from slim sandwiches to plump burgers. Turtle Cookies

I know I say it often, but my daughter, Leigh, is an amazing girl. No new task is too much of a challenge for her, and she is becoming quite the cook and baker. She recently found this recipe for Turtle Cookies on Pinterest from the Pixelated Crumb, and she had to make them. I admit that I helped her a bit, but these came out incredible. She said, “These taste like a chocolate lava cake” while they were warm, and she was correct. The caramel makes this cookie even better. OMG! We both agreed (as well as my two boys) that these are some of the best cookies we have had in a long time. Thank you Leigh for this fantastic cookie recipe find!

Mini Banana Bread Loaves with Flaxseed

This recipe for Mini Banana Bread Loaf has to be one of my all time favorites for so many reasons. First, it’s an awesome recipe and makes moist flavorful bread perfect for breakfast or a snack. It is also so healthy because it is made with nonfat Greek yogurt and ground flaxseed. I am a huge fan of using nonfat Greek yogurt because it has no fat, very few carbohydrates and is high in protein. Flaxseed is often called the “most powerful” plant food there is. It’s linked to so many benefits including reducing cholesterol, menopausal symptoms, constipation and arthritis. It also aids in protection against cancer, diabetes and heart disease. Lastly, you don’t even need a mixer so cleanup is a snap. When I taught the Kid’s Cooking Class a week ago in Park City, this recipe was a huge hit!

Bakerella’s “Cake Pops” Book and Cookbook Giveaway

The first food blog I followed was Angie Dudley’s blog “Bakerella”. To me, it was (and still is) one the most incredible food blogs, and I patiently awaited each fabulous post clicking on her site day after day hoping for her to post again. I was contemplating starting my own blog at the time, and I emailed her and asked a number of questions. She was beyond sweet, helpful and resourceful, and I don’t know if I can ever thank her enough for all of her advice and encouragement. Recently, her incredible first book, “Cake Pops”, was released by Chronicle Books, and I couldn’t wait to get my hands on a copy. This book is filled with incredible ideas, photos and recipes on how to turn a cake ball and cake pops into incredible shapes and designs. This book offers step-by-step instruction on how to create these. A few weeks ago, I was so fortunate to meet Angie in person at a conference, and she was so humble, gracious, and nice. I am so excited about her success, and I couldn’t wait to feature her new book on my site. This book is perfect for anyone that loves creativity and food, and I highly recommend it (my kids took it to school the other day, and all of the parents were calling me how to get a copy).

Three Ingredient Easy Treats: Chocolate Turtle Candies

One of my subscribers from Florida, Melanie, asked me to make these delicious treats and put them up on my blog. I wasn’t familiar with this recipe or idea, but some people are. If you haven’t ever seen this, you will love it. They are only 3 ingredients, and everyone loves them. I taught a private cooking lesson today for an amazing and adorable second grader, and she even said, “What a great party idea!”

My only daughter, Leigh, has been gone for 4 weeks at camp and comes home tomorrow (today for all of you reading this). I cried so hard when she left-I couldn’t even take her to camp as I didn’t want her to see how upset I would be missing her. So in her honor, I thought I would post one of her favorite recipes that was on my blog a long time ago which she created herself and makes all on her own. She is so special, and I can’t wait to see her!

Easy Salad with Strawberries, Mandarin Oranges and Pecans is ideal anytime of the year and takes only 20 minutes to prepare.
