Bacon, Egg and Cheese Biscuit Recipe

Our weather in Birmingham has been so dreary since the new year with SO many rainy days, so I thought I would share a comfort food recipe. This Grilled Egg, Cheese and Bacon Biscuit recipe is my three kids’ favorite breakfast lately. This recipe is just one of the breakfast recipes in my latest book “150 Best Grilled Cheese Sandwich Recipes”. With 150 options, you’ll find recipes including appetizers, breakfast recipes (such as this one), main dishes, desserts and condiments in this cookbook. An entire chapter is also dedicated to light and healthy grilled cheese recipes. This book has something for about everyone and every season. For more information on where to purchase my book, click here.  It can also be found in local bookstores as well as Amazon.

Chocolate-Chocolate Chip Cookies

My friend, Amy, sent me this recipe, and it has to be one of the easiest cookie recipes I have tried. Chocolate-Chocolate Chip Cookies are so quick to prepare, and they’re truly divine. This is one of those recipes that just becomes a staple, and you keep making all of the time. They remind me of a crinkle cookie, but the mixture of semisweet chocolate morsels and chopped chocolate makes a gooey, chocolate combination. You can substitute dark chocolate for the semisweet for added health benefits such as heart health, weight loss, mood boosting, and others. Just enjoy them with a glass of milk.

Simple Summery Peach Pie

Living in Alabama does have its perks, especially living near easy access to fresh Chilton County Peaches. I have been visiting Durbin Farms since I was a child, and they still have the most unbelievable peaches. These peaches (below) were bigger than a softball, sweet, juicy and bursting with fresh peach flavor. A friend of mine passed me this recipe for Simple Peach Pie, and it really can’t get much easier than this. It’s fast with very few ingredients, and it was gone before I could turn around. When you have peaches this sweet, you don’t even need vanilla ice cream on the side, but it is a good addition :).
