College Student Recipe Idea: Panko-Parmesan Chicken Fingers

On Thursday evening, I am teaching a college cooking class, and I am preparing a recipe for Panko-Parmesan Crusted Chicken, a salad, an appetizer and a dessert. This is a great substitute for fried chicken, and it’s lower in fat while still crispy and delicious.¬†Panko breadcrumbs are Japanese-style breadcrumbs which are coarser in texture and provide a wonderful crunch and flavor to main dishes. They are usually found in a box in most grocery stores where breadcrumbs are sold.¬†

Layered Chicken Santa Fe Salad

We love salads for supper, and anything Southwestern goes over great at my house. Layered Santa Fe Salad is a breeze. Purchase a rotisserie chicken from the grocery, or use leftover grilled chicken. Serve with salsa or, for kids, ranch dressing. In under 25 minutes, you will have a colorful dinner on the table that is so healthy, high in protein and low in fat.

Kid and Adult-Friendly: Easy Pizza Quesadillas

It’s my oldest son, Alec’s, birthday this weekend so I thought I would feature a recipe that he actually made up himself. It’s Pizza Quesadillas, and for those of you who have kids, take note. My kids actually make these by themselves with little help (except turning on and off the stove) so when you’re in a pinch on what to have for dinner, give these quesadillas a try.

Healthy Pomegranate Blueberry Smoothie

Smoothies are very popular at my house. We make them several times a week, even in the wintertime for dessert, as an afternoon snack or for breakfast. My kids love to try new concoctions, which is great because we are always using fresh, healthy ingredients such as yogurt, fresh fruits and fresh juices not from concentrate. I am thrilled to indulge in smoothies as well as providing the kids with something so healthy that boosts energy levels, fills you up and makes you feel great. Sometimes I even sneak in a couple of tablespoons of wheat germ, crushed flaxseed, and they don’t even know it. Try this recipe or make one of your own as a fresh start to the New Year.


Pomegranate-Blueberry Smoothie

Prep: 5 minutes

Yield: 8 cups

Ingredients

2 (6-ounce) containers low-fat strawberry yogurt (I used Dannon Light/Fit)

3/4 cup pomegranate juice such as Pom

1 tablespoon honey

1 pint fresh blueberries

1 banana

11/2 cups cubed or crushed ice

Preparation

1. Combine all ingredients in an electric blender and process until smooth and frothy. Serve immediately.
