This week I assigned our dinner menu to my my youngest son, Zachary. He came up with a great menu of pizza night, fajitas night, and the amazing idea for a pasta with fresh salmon and kale. I came up with this Salmon and Kale Pasta recipe, and all three of my kids loved it. My oldest son, Alec, talked about healthy it was with the protein, vegetable and carbohydrate all in one. He said it was a great dinner after his playoff basketball game (of course, he won that night). They have already asked me to make it again. 🙂

I started getting together my Thanksgiving recipes, and put this Kale Pasta Salad on the list. It’s a cold salad (I know), but it pairs well with the holiday turkey. This has become one of our favorites with grilled meats and seafood. I even add grilled chicken to it, and the kids take it to school for lunch. It’s super easy, and it makes a lot so enjoy all week long.
I love making Frittatas so I thought why not a Kale Frittata recipe? I added red bell pepper, leeks, Parmesan and feta and oh, it was fabulous! Add any of your favorite vegetables such as mushrooms, onion, tomato, or other greens such as collards or swiss chard. Kale, one of the top super-foods, is so healthy for you and inexpensive. This is a great way to use it up, using 31/2 cups of fresh kale. Serve with a side salad and you’ll have a great holiday brunch, lunch main course, or a “what’s for dinner “recipe. Enjoy!
Who is excited about Fourth of July tomorrow? It’s supposed to rain here, and I don’t have any big plans. I have been focusing on being extra healthy this week, so I just created this summer detox juice: Kale Cherry and Berry Juice. It’s super easy, and it tastes wonderful! Feel free to substitute other fruits that you may have in your refrigerator such as fresh pineapple, mint and any produce that you love. Try it after a morning workout or an afternoon snack.
