Immune Boosting Smoothie Shots

These Immune Boosting Smoothie Shots are a fabulous way to kick off the week. In only five minutes and a quick few sips, you will get a healthy serving of immune boosting raw fruit and vegetables. Place all of the ingredients in a blender and process until smooth. If you want the mixture colder or thicker add ice and for added protein, add protein powder. Adding half of an avocado also adds thickness and more vitamins.

I love making these for my family for a simple way to get vitamins and minerals naturally. Kale is frequently called “the queen of greens” and “a nutritional powerhouse.” Kale is high in Vitamin C, which is helpful to keep your immune system strong. Kale is high Vitamin A is great for your vision and your skin. Just one cup of kale contains 206% of our daily vitamin A requirement. Kale is also high in calcium, iron and K, so it’s an all-around winning vegetable.

Green Coconut Bowl

Prep: 10 minutes

Yield: 1 serving

1⁄4 cup unsweetened coconut milk (or milk of your choice)

1⁄2  frozen banana, cut into pieces if necessary

1⁄3 cup frozen chopped mango

1 cup trimmed kale leaves

2 tbsp  unsweetened shredded or flaked coconut

Ice cubes (optional)

Suggested Toppings

Sliced banana

Blueberries

Raspberries

Unsweetened shredded or flaked coconut

Chia seeds

  1. In blender, combine coconut milk, banana, mango, kale and coconut. Secure lid and blend (from low to high if using a variable-speed blender) until smooth. If a thicker consistency is desired, add ice, one cube at a time, and blend until smooth.
  2. Pour into a bowl and top with any of the suggested toppings, as desired.

I had a great time last weekend at Lake Austin Spa Resort where I was teaching smoothie bowl classes promoting my latest cookbook 200 Best Smoothie Bowls. I also had the amazing opportunity to workout, take a mediation for clarity class, try hydrobikes and experience amazing spa treatments and of course, food. The food at this Texas spa is out of this world with so many clever, creative and healthy combinations. The first night they had “Kale Guacamole” on their menu for an appetizer. They didn’t have the recipe, but I came home and recreated it tonight. My husband said, “It tastes just it.” This recipe is classic guacamole recipe with kale added. Why did I not think of that?

I made this Kale Slaw last week, and my husband and kids loved it! Then I had to take a side dish to some friends house to go with dinner on Saturday night so I made it again (they loved it!). All you need is fresh kale, shredded cabbage, lemons, sesame seeds and walnuts, and most of the other ingredients you already have on hand. It’s so easy and fresh! Just one thing: It’s addictive so you may want to double the recipe. It will keep up to 2 days so enjoy!

These green juice Detox Shots are an amazingly healthy way to start off your day. I made this with my favorite healthy ingredients, and all you need is 5 minutes. Place the ingredients in a blender and process until smooth. If you want the mixture colder or thicker add ice and for added protein, add protein powder. You can drink this as a smoothie/green juice or serve as Detox shots which is a fun twist to get vitamins and minerals naturally. I have had one shot or glass since Sunday, and two friends asked me today why my skin was glowing and looks so even colored. I wonder if it has to do with drinking these, but regardless, I fell energized and not sluggish and I know I am doing something wonderful for my body! Healthier New Years recipes, yes it’s true! New Years Eve has snuck up on me this year, and I am still not sure of my New Years plans yet I typically make a really nice dinner at home with some wine and/or champagne, a great appetizer, entree and nice dessert. I have been working on some healthier New Years recipes this year as you’ll see below my developed recipes for SC Johnson,  Fitness Republic, Momspark and of course, Ingredients, Inc. starting with my Pear Pecan Crostini Recipe from Ingredients, Inc. Here are some of my top healthy lifestyle tips that I am going to try to stick to in 2016:

Watermelon and Kale are two superfoods that (believe it or not) my three kids love! Last week we went out walking in our fun Alabama 97 degree heat, and I made this Watermelon Kale Smoothie topped with chia seeds and fresh watermelon and OMG it was so good! I know, I know. It looks weird at first. Trust me on this one. You just have to try it! Are you trying to start the new year off on the right foot by eating healthy and trying to maintain or lose weight? This Kiwi and Kale Smoothie recipe is a great way to begin 2015 because it’s made with some of my favorite healthy ingredients including kale, kiwi, nonfat Greek yogurt, mango and a the low calorie sweetener, aspartame. Aspartame is ideal to use in this recipe (as well as many others) because it adds just the right amount of sweetness without adding calories. Aspartame can truly be part of a healthy diet. The rapid rise in aspartame’s popularity can be attributed to the many benefits aspartame provides to calorie-conscious consumers. Aspartame is also beneficial in weight control. With nearly two out of three Americans considered overweight or obese, taking steps to assure appropriate calorie intake is very important. Happy New Year! For New Year’s day and football watching, I made this comforting and fabulous Kale Lasagna Soup recipe. It has all of my favorite ingredients including kale, Italian sausage, tomatoes, basil and carrots. This soup is filling, a one dish meal, and so quick and easy. Feel free to use gluten-free noodles or no yolk ribbon noodles–they look like mini lasagna noodles. My family loved this recipe–we ate the entire thing in one day! This is perfect for a cold winter evening, Super Bowl or anytime during the year!
