I had a great time last weekend at Lake Austin Spa Resort where I was teaching smoothie bowl classes promoting my latest cookbook 200 Best Smoothie Bowls. I also had the amazing opportunity to workout, take a mediation for clarity class, try hydrobikes and experience amazing spa treatments and of course, food. The food at this Texas spa is out of this world with so many clever, creative and healthy combinations. The first night they had “Kale Guacamole” on their menu for an appetizer. They didn’t have the recipe, but I came home and recreated it tonight. My husband said, “It tastes just it.” This recipe is classic guacamole recipe with kale added. Why did I not think of that?

My Favorite New Kale Slaw Recipe

Kale Slaw

I made this Kale Slaw last week, and my husband and kids loved it! Then I had to take a side dish to some friends house to go with dinner on Saturday night so I made it again (they loved it!). All you need is fresh kale, shredded cabbage, lemons, sesame seeds and walnuts, and most of the other ingredients you already have on hand. It’s so easy and fresh! Just one thing: It’s addictive so you may want to double the recipe. It will keep up to 2 days so enjoy!

These green juice Detox Shots are an amazingly healthy way to start off your day. I made this with my favorite healthy ingredients, and all you need is 5 minutes. Place the ingredients in a blender and process until smooth. If you want the mixture colder or thicker add ice and for added protein, add protein powder. You can drink this as a smoothie/green juice or serve as Detox shots which is a fun twist to get vitamins and minerals naturally. I have had one shot or glass since Sunday, and two friends asked me today why my skin was glowing and looks so even colored. I wonder if it has to do with drinking these, but regardless, I fell energized and not sluggish and I know I am doing something wonderful for my body! Healthier New Years recipes, yes it’s true! New Years Eve has snuck up on me this year, and I am still not sure of my New Years plans yet I typically make a really nice dinner at home with some wine and/or champagne, a great appetizer, entree and nice dessert. I have been working on some healthier New Years recipes this year as you’ll see below my developed recipes for SC Johnson,  Fitness Republic, Momspark and of course, Ingredients, Inc. starting with my Pear Pecan Crostini Recipe from Ingredients, Inc. Here are some of my top healthy lifestyle tips that I am going to try to stick to in 2016:

  1. Do not skip breakfast!
  2. Drink more water.
  3. Eat more color: more vegetables and fruits everyday in orange, green, yellow, purple, red and white
  4. Do more yoga
  5. Live in the moment and be more mindful.
  6. State gratitude: Write down or say to myself three things I am grateful for every day.
  7. Exercise including cardio and weight training
  8. Read more
  9. Step out of my comfort zone more often
  10. Keep on traveling

Watermelon and Kale are two superfoods that (believe it or not) my three kids love! Last week we went out walking in our fun Alabama 97 degree heat, and I made this Watermelon Kale Smoothie topped with chia seeds and fresh watermelon and OMG it was so good! I know, I know. It looks weird at first. Trust me on this one. You just have to try it! For 152 calories and 3.6 grams of protein, this recipe also is very high in vitamin C and manganese as well as potassium, Vitamin A and B6! For health benefits of watermelon click here. I have something healthy for St. Patrick’s day morning. How about a delicious and nutritious Green Pistachio Smoothie that will nourish and energize you in preparation for the fun-filled day? Are you trying to start the new year off on the right foot by eating healthy and trying to maintain or lose weight? This Kiwi and Kale Smoothie recipe is a great way to begin 2015 because it’s made with some of my favorite healthy ingredients including kale, kiwi, nonfat Greek yogurt, mango and a the low calorie sweetener, aspartame. Aspartame is ideal to use in this recipe (as well as many others) because it adds just the right amount of sweetness without adding calories. Aspartame can truly be part of a healthy diet. The rapid rise in aspartame’s popularity can be attributed to the many benefits aspartame provides to calorie-conscious consumers. Aspartame is also beneficial in weight control. With nearly two out of three Americans considered overweight or obese, taking steps to assure appropriate calorie intake is very important. Because products with aspartame are lower in calories than their sugar-sweetened counterparts, using products with aspartame together with regular physical activity can help with weight management. Happy New Year! For New Year’s day and football watching, I made this comforting and fabulous Kale Lasagna Soup recipe. It has all of my favorite ingredients including kale, Italian sausage, tomatoes, basil and carrots. This soup is filling, a one dish meal, and so quick and easy. Feel free to use gluten-free noodles or no yolk ribbon noodles–they look like mini lasagna noodles. My family loved this recipe–we ate the entire thing in one day! This is perfect for a cold winter evening, Super Bowl or anytime during the year!

Are you in the hustle and bustle of the holidays already? I certainly am, but I love holiday entertaining! Trust me, entertaining this time of year can be fun and easy. I am very excited to share this recipe for Warm Kale Bacon Dip just in time for your holiday gatherings. It’s my family’s favorite appetizer as it uses a few of our most loved ingredients such as kale, Borden and Sargento cheeseDannon Oikos Greek Yogurt and Bays English Muffins. What I really love about this recipe is its simplicity by using high-quality brands of shredded cheeses along with healthy ingredients such as Greek yogurt and kale. Friends ask me all the time for my top stress-free cooking tip and I usually tell them to keep it simple. Use your favorite ingredients and stop by the dairy and/or freezer section to make your life even easier. You can find so many items in these sections of the grocery store, which make cooking more economical, convenient and your recipes taste even better.

For this dip recipe, start by roasting the kale with a touch of olive oil until it is slightly wilted and crispy. Then, add to the cheeses and yogurt, stirring well. Complete this by topping with crumbled bacon. If you’re not a bacon fan, you may omit this step. I used Bays English Muffins from the dairy section, which are a perfect accompaniment to this warm cheesy dip with their great texture and flavor.

Besides being tasty, this holiday appetizer is healthy too! It is filled with calcium, one of the body’s most important minerals for strong healthy bones, as well as active cultures in the Greek yogurt, which adds more protein to this appetizer while also aiding in digestion and boosting the immune system (we all need this during the cold winter months). Kale is another fabulous, healthy ingredient addition, known as a super-food with vitamins and minerals.
