Apple Cinnamon Cake

My sister, Julie, asked me to make an apple cake for this Sunday night for Rosh Hashanah. We are having 18 people so a birthday cake and Mandel Bread just aren’t enough :). Since I am making the main dish too, I decided to make this Apple Cinnamon Cake, a super easy apple cake that is also very simple to slice. No mixer is needed for this recipe, and those most difficult part is is peeling and chopping the apples (luckily my husband is a pro at this). This comes out moist and fabulous (I think the Greek yogurt really helps add to its fluffy texture). Serve this with coffee for dessert or for breakfast or afternoon tea. This recipe is a keeper and wonderful tribute to a sweet new year.

Lightened Up Noodle Kugel with Greek Yogurt

Yom Kippur is the Jewish holiday known as “Day of Attonement” starting tonight at sundown until Wednesday night at sundown. It is known as the holiest day of the year where Jewish people fast for 25 hours as well as pray and repent for their sins from the past year. On Wednesday night families get together for a “break the fast” where a light meal its typically served with smoked salmon, bagel, egg dishes and noodle kugel. Every year my family begs me to make my noodle kugel recipe so this year, I changed things up a bit. I took one of my favorite noodle kugel recipes for Apricot Noodle Kugel, and I added fruit tidbits and golden raisins. I also used nonfat Greek yogurt instead of sour cream, reduced the butter and the eggs.

I am so lucky to be spending this year with my dad. I miss my mom so much, but I thrilled for the opportunity to have my 3 kids and I live in his beautiful home where we feel love and can give him love. Apple Praline Bundt Cake

When I saw the cover of Southern Living Magazine last month, I knew this very special Apple Bundt Cake with Praline Frosting had to be on my dessert table for the Jewish holiday, Rosh Hashanah. Thanks to my sister, Julie and her friend, Toby, my wish came true. This recipe rocks! What else can I really say? The entire issue of the magazine really does. So many recipes, so little time….I hope if you’re looking for a sinfully gorgeous Apple Cake to make, you’ll choose this one with Southern Flair (my kids loved the Praline Frosting). Happy New Year to those celebrating (and those who aren’t :)).

Awesome Honey Cake for Fall and Rosh Hashanah

My father’s mother, Mary Rich, made the best Honey Cake that I can remember. She died when I was young, but I have never forgotten it. For years, my sisters and I have been searching for a Honey Cake recipe that would rival hers. Last year, my mom’s incredible friend, Rosalie, brought a Honey Cake to our families Rosh Hashanah holiday dinner, and it was a winner! We loved the recipe so much, and it reminded us of Mary. I hope you will like it as much as we do. It’s perfect for the Jewish New Year, Rosh Hashanah or any fall celebration. Note: the batter will be slightly liquid, but the recipe turns out moist as can be.

The Best Passover Brownies

Since I have been working with so many brownie recipe variations for one of my food clients, I realized I needed to create the Best Passover Brownie. This ingredient combination worked like a charm. When I took them out of the oven, I took a picture and put them on Facebook (I was so excited how they turned out). I had a lot of people wanting the recipe ASAP so here it is. It is so easy and fabulous. My friend said, “These are the best Passover Brownies I have ever tasted.” I hope that you like them too, and that they sweeten up your holiday.

Charoseth or Haroseth Traditional for Passover

I have to apologize that I am slightly behind on my Passover recipes to share with you. I was at the Mom 2 Summit conference last week in New Orleans attending and speaking, and I honestly got behind. Many friends have been asking me about traditional Passover foods and the Passover Seder, so I must share this simple recipe for Haroseth (also spelled and pronounced Charoseth). This mixture of wine, nuts and apples is a symbol of the mortar used by the Israelites to bond bricks while they were in slavery in Egypt. It is traditional to serve this with matzoh during the Seder meal with, and without, horseradish. It has an awesome flavor, and it is always is a hit!

Hamentashen Cookies: A Purim Tradition

Hamentashen are triangle fruit cookies served and eaten during the Jewish holiday of Purim which falls this year on March 20th for two days. They are recognizable for their three-cornered shape, a symbol of “Hamen”, a villain in the Purim story (who always wore a three cornered hat). The story of Hamen and Purim appears in the Biblical book of Esther. Purim is often celebrated by attending children’s carnival celebrations as well as the giving of food gifts to friends (including Hamentashen) and gifts to charity. The Hamentaschen shape is achieved by folding the sides of a circular piece of dough with a filling of apricot, prune, poppyseed strawberry, blackberry and even chocolate filled in the center. This recipe is wonderful, and kids love making and eating them.
