Superbowl Recipe: Grilled Roast Beef and Stilton

Thursday Thoughts: New Travel Magazine, Awesome Kids and more

Wow, what a week! I worked ALL last weekend and this week on the upcoming launch of Healthy Travel Magazine coming March 2013 in conjunction with Atlanta Homes & Lifestyles Magazine. This has been my 10-year idea which is now coming into reality. Being an Editor-in-Chief of a new travel magazine launch is the most thrilling experience in my entire career (and a lot of work too)! Wait until you see it!

Other news:

1. My three kids are awesome! My daughter, Leigh, is getting ready for several upcoming dance competitions this month with dance rehearsals every weekend. She has incredible passion and drive, and I am so proud of her!

My son, Zachary’s birthday was last week. He got a new basketball goal, and if it ever stops raining, he might get a chance to try it out. This is us overlooking the Birmingham skyline (small I know).

My oldest son Alec, is too talented for words. A new package arrives weekly for him to review for his outstanding and growing sports blog Sneaker King. Check it out and please share to your friends! This is all of the work of a 15-year-old on his own. I am SO impressed!

2. My dad has been really sick for a week. It’s tough! Say a prayer for him.

3. Being a single mom of 3 kids (who works more than full time) is a really difficult thing. If you didn’t know that about me, you do now! Please send any words of wisdom over my way.

Arugula-Tomato Pizza

Instead of going out for pizza, try this Arugula-Tomato Pizza, an easy 30 minute vegetarian option. I love using Mama Mary’s Pizza crusts which you can typically find near the deli section of the grocery store. They are quick and easy and not too high in calories, fat or carbohydrates. Arugula is so healthy for you, full of Vitamins A, C, K, Calcium and Iron. Arugula is said to be great for your eyesight and full of antioxidants which can help prevent cancer. It’s my daughter’s newest favorite salad green, so try to get your kids to taste it too!

Kale Salad: Family Friendly, Gluten Free and Healthy

If you are trying to eat healthy and want to get your year started off right, this Kale Salad recipe is ideal. I recently made this for the kids, and they loved it. It is great on its own as a salad or side dish, served over arugula or greens or even mixed into a salad with chicken, shrimp or fish. Fresh Shrimp Salad: Start the New Year’s Right

Start the New year’s right with this Fresh Shrimp Salad. In just 30 minutes, you will have a perfect healthy main dish to serve over greens, eat with crackers or put on a sandwich. Four ounces of boiled or steamed shrimp contains just 112 calories. This serving provides nearly 24 g of protein and 1.2 g of fat–only 0.3 g of which is saturated. Shrimp contains no carbohydrates. Shrimp has been said to build strong bones, stabilize blood sugars, boost energy and fight depression. My three kids loved this recipe, and it’s perfect for dinner or lunchtime.

Happy New Year and welcome to 2013! This past year has been a really tough year for me and my family. I am hoping for a bright future ahead, clean slate and to try to make the best of every day in the coming year.
