Gluten-Free Fresh Cherry and Almond Muffins & Gluten-Free Muffin Cookbook Giveaway

Gluten-Free muffins? Yes! It’s hard to believe that making muffins gluten-free can taste fabulous, and Cookbook Author, Camilla Saulsbury, shows us how in one of her latest cookbooks “150 Best Gluten-Free Muffin Recipes”. This book is a collection of great recipes, expert baking tips, expert baking techniques and even a gluten-free ingredient glossary to help the novice as well as the expert gluten-free baker. Recipes such as Rocky Road Muffins, Bacon Scallion Muffins, Indian Spice Coconut Muffins and Sour Cream Muffins are just a few calling my name. These Fresh Cherry Almond Muffins (pictured above) were out of this world. Before I could turn around, my 3 kids devoured them. No-Bake Mini Healthy Bites: Gluten-Free and Passover

I love to experiment with “No-Bake” cookie recipes, especially those that are gluten-free, Paleo Diet or perfect for Passover which starts this week. I was excited to make this recipe for No-Bake Mini Energy Bites which I made and tweaked from a recipe I saw on the blog, “Gimme some Oven”.  Her recipe is great, but if you want a Passover or gluten-free version, try grinding your favorite nuts and omitting the oatmeal. These are incredible, and I honestly could not keep my hands out of the container. My 3 kids had absolutely no idea there was flaxseed in them. Feel free to use almond butter instead of peanut butter and any of your favorite nuts.

Thanksgiving & Christmas Breakfast Recipes: My Favorite Coffee Cakes

One of my favorite things for breakfast is a truly awesome coffee cake. I crave it this time of the year, especially as the weather cools. My recipe for Apricot Almond Coffee Cake (above) was on my blog last year, and it’s so delicate and flavorful (I love the added touch of using Greek Yogurt). I have been eyeing some other recipes to try this season to serve on Thanksgiving and Christmas morning. Healthy Mini Pumpkin Flaxseed Bread Recipe

I love one bowl, no mixer, quick bread recipes such as this one for Mini Flaxseed Pumpkin Bread Loaves. Not only is this so easy to prepare, but my kids can almost basically make them on their own with very little clean-up. I added a touch of nonfat Greek yogurt and ground Flaxseed to make these even healthier, moister and with added crunch, and my 3 children had no idea those ingredients were even in there. These Mini Pumpkin loaves make a great breakfast, afternoon snack or dessert that you can feel good about eating and serving to your kids. These also make wonderful Christmas food gifts as well :).

For this winter, I am totally loving the cape. This piece is totally classic, but today, designers have made the cape contemporary and modern.You will definitely want this staple in your closet today! I love all of the styles I have shown you. Some are loud, fun, and bold. The others are more neutral, and they will go with everything. If you are worried that you will freeze in a cape, then don’t worry. In the milder winter periods, all you need to wear is a thick cashmere sweater with long gloves.

Halloween Cupcakes

Every Halloween my daughter, Leigh, loves to have friends over to decorate cupcakes for Halloween. I purchase an array of baking supplies, and she and her friends scan the internet for inspiration. They always ask me what blogs are some of my favorites so I do have some influence with some of their selections. Lightened Up Chicken Tetrazzini

Lately, I’ve had so many requests for an easy, healthy fall weeknight dinner recipe that kids will love too. This recipe for Lightened Up Chicken Tetrazzini is one that really sticks out in my mind. I purchase a rotisserie chicken for the chopped, cooked chicken which makes my life easier. I also used light cream cheese, low sodium chicken broth and whole wheat noodles to make this dish healthier. The panko breadcrumb topping is probably my favorite part, giving it a toasty crunch and pretty golden color. This is a great make-ahead recipe or wonderful to take to someone who is ill or just had a baby. Feel free to make this recipe ahead of time and freeze. To thaw, place in the refrigerator overnight and let stand at room temperature 30 minutes before baking as directed.

Off to Nashville for Food Blog Forum

I’m so excited to be heading to Nashville this Friday to attend and speak at Food Blog Forum. Nashville is one of my favorite cities, and what better place to host a hugely talented bunch of food experts, bloggers and brands. I am honored and thrilled to be speaking with Kelly Senyei, from Gourmet Live and Just a Taste, on a “Recipe Writing & Development” panel. I have thoroughly enjoyed working with and getting to know her over the last few months, and we have some great information to share. I am also speaking on an “Experts” Round Table on “Working with TV and Media”. I think this conference will be so much fun! Join us if you can.
