Who is ready for Labor Day weekend? My son, Zachary has been excited about this weekend for quite some time. I gave him a surprise gift for his birthday in January-a voucher saying we are headed to the US Open in New York this year for Labor Day weekend 2015. We will be back late Sunday and Monday, my mother-in-law, Rosemary, is having us for a wonderful dinner. Rosemary makes homemade ice cream for every holiday (except Christmas) and most family celebrations. She gave us her core ice cream recipe, so we’ve been making some on our own (see my Oreo Ice Cream here). We recently made this Banana Ice Cream with some overripe bananas we had on hand, and it came out AMAZING! This is a wonderful and easy Labor Day dessert recipe idea. Serve with vanilla wafers or any of your favorite toppings (although it does not need any). Happy Labor Day weekend. Have a fun, relaxing and very safe one!

It is hard to believe that school starts in a week. I will be driving my son to Missouri for College in a week (another thing hard to believe or think about). Before summer ends, I am continuing to use summers freshest fruit and vegetables in my kitchen. I created these Watermelon Mint Floats the other day which were a huge hit! I received an ice cream maker for one of my wedding presents, and the kids and I are obsessed with it! My husband’s mom makes homemade ice cream for every holiday, so I had to step up my non ice cream making abilities  and learn the craft. This Oreo Ice Cream recipe is one of my first creations. This recipe is so easy with only 10 minutes of preparation time, and it can be made several days in advance. Substitute your favorite chocolate chip cookie or candy bars for the Oreos if you wish. S’mores Ice Cream Pie

My kids and I have been making a lot of S’mores this summer. I  had the idea of a S’more’s Ice Cream Pie, and I quickly put this recipe together. I used fudge ripple ice cream, but feel free to use any flavor of your favorite ice cream. You could also sprinkle the top with chocolate shavings, but kids were in such a hurry to eat it, I didn’t even have the time. Oh, well, here’s to summer 2012!

Homemade Ice Cream Sandwiches

For Fourth of July weekend, I wanted to share my recipe for Homemade Ice Cream Sandwiches from my new cookbook “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. I came up with this recipe last summer while I was working on this book. My three kids were in the kitchen helping me, so I tried to make it as simple as possible. It is perfect to serve this weekend if you are celebrating with friends and family, or anytime this summer. Use your favorite homemade chocolate recipe or store-bought cookie dough.

Summer Dessert Comfort Food: Peach-Blueberry Crisp

I’ve been searching for a great crisp recipe using fresh peaches and blueberries that I bought yesterday from the farmer’s market. My sister just recently purchased Emeril’s book “20-40-60 Fresh Food Fast”, and showed me his recipe. I adapted his recipe just slightly reducing some of the butter and using whole wheat flour. It came out great! Enjoy the peak of delicious summertime fruit with this comforting dessert.

My friend, Amy, is a longtime great friend. She was my very first blog fan and is always making great suggestions and tossing around ideas for me to consider. She recently suggested I designate a certain day of the week as “review day”, which I had been thinking about doing as well. Since she’s a huge ice cream lover, I thought I would start here. I love this cookbook “Perfect Scoop” by David Lebovitz. It has so many great recipes for ice cream, granitas, sorbets, sauces, toppings and “mixins”. One of my favorite healthier recipes in the book is Strawberry Granita. You don’t need an ice cream maker for this recipe, but if you’re looking for a new ice cream maker, check out the one below by Deni.
