Yesterday, I did a television cooking segment for NBC 13 Daytime Alabama featuring fresh Chilton County Peaches. One of the three recipes I made was Pork Chops with Peach Salsa which was featured on my site a few weeks back. Salmon with Warm Black Bean Salsa

When Whole Foods Market asked me if I would do one of my television cooking segments for NBC 13 “Daytime Alabama” on Alaskan Salmon, I said, “Yes, please.” We eat salmon at least once a week at my house. Salmon is called a “superfood” because it’s high in omega-3 fatty acids, a type of fat that seems to decrease the risk of heart disease. It’s also a prime source of protein and contains vitamins A and B. This salsa works great with the dish featuring “I Can’t Believe It’s Not Butter Spray”. Serve the salsa warm or at room temperature.

I have had a super busy month. Busy is good, but it’s almost unbelievable. It’s the heart of summer, and I am working at home with 3 kids going in 3 different directions. Besides my normal recipe development work projects, my cookie event at Pepper Place farmer’s market last week, 4 television segments this past thursday for NBC 13 “Daytime Alabama”, monthly work for the Birmingham magazine, and a new huge holiday recipe project for an international client, I can’t believe I am finding time for this blog post. In light of all this, I am fortunate enough to have the opportunity to go to Park City, Utah for Evo 10, a conference featuring women in social media. It’s been called “a summer camp for bloggers” taking place in a beautiful setting. Forgive me for no recipe today, but I have a fabulous one coming tomorrow.

Rich and Creamy: Lightened-Up S’mores Milkshakes

Last week, I mentioned I was in a s’mores whirlwind creating s’mores recipes for various projects. I created this recipe for S’mores Milkshakes in my guest blog post on a really fun website “Makes and Takes“. It’s as yummy as it looks and so easy. Fresh Taste of Summer: Cantaloupe-Coconut Smoothie

My last television segment on NBC 13 “Daytime Alabama” was such a hit, and the food topic was smoothies. Smoothies are wonderful to prepare for dessert, afternoon snack or breakfast for kids and adults. This is the best time of year to make them when fruits are so vibrant. Cantaloupe-Coconut Smoothie combines some of my favorites: cantaloupe, coconut and pineapple. My kids are huge smoothie fans, and every time I turn around the blender is out on the counter. I can’t wash it fast enough. Enjoy this recipe just in time for ripe cantaloupes. To choose a ripe cantaloupe, it should smell sweet, have an even coloring and be heavy for its size. If you tap on it, it will sound hollow if it’s ripe.

Easy, Healthy Appetizer or Main-dish Recipe: Pork Lettuce Wraps

This recipe was featured on NBC 13 Daytime Alabama for I Can’t Believe It’s Not Butter this week. My kids love lettuce wraps so this is perfect to serve at my house and only 3.5 grams of fat. It’s also very economical, only $6.93 for the recipe or $1.73 per serving. Feel free to substitute steak, chicken or shrimp for the pork in this recipe.

Spring Salads: Curry Chicken Salad

I love Curry Chicken Salad, and this is one of my favorites. It’s really quick and easy because I like to use rotisserie chicken to simplify things. The combination of chutney, white wine, curry, cranberries and nuts flavor it to perfection. This recipe will be featured on Tuesday on NBC 13 “Daytime Alabama” at 11:30 a.m central time along with a few other wonderful spring salads. Take a look or check the website for the video.

Healthy and Light Salmon in Under 30 Minutes: Salmon with Orange Salsa

I’m always looking for new recipes and ideas on how to prepare salmon since we eat it so often. I have been beyond incredibly busy lately with work, kids and more work. I love this recipe because it’s so easy and fresh and can be prepared in under 30 minutes. Plus, it’s really light and healthy. I made this recipe for NBC 13 “Daytime Alabama” that will air this month, and it is one of I Can’t Believe It’s Not Butter’s wonderful recipes that I tweaked (just slightly) for TV.

Delicious and Healthy Easter or Passover Side Dish: Vegetarian Stuffed Zucchini

I made this recipe last year on NBC 13 “Daytime Alabama” for Passover and Easter, and it was a hit. This Stuffed Zucchini recipe was one of my kid’s favorites (believe it or not). This recipe for Stuffed Zucchini only has 150 calories per serving, 2.g grams of fat and only 13 carbs, and the cost per recipe is only $7.03 (for 4 people, very economical for fresh veggies).

My youngest son, Zachary said, “This tastes almost like a vegetable pizza.” I have to admit. He was right.  So, if you’re looking for a new healthy side dish for Passover, Easter or for anytime during the year, try these. I bet you will be pleasantly surprised. It’s really easy too. I promise!

Dijon Salmon Burgers with Greek Yogurt

I posted a Salmon Croquette recipe a while back that has been very popular and one of my top posts. I made these healthy Salmon Burgers for a television segment that will air next week on Friday, February 5th on NBC 13 “Daytime Alabama”. They’re so easy and full of great healthy flavor filled with Greek yogurt, panko breadcrumbs, chives and Dijon mustard. Serve on a bed of spinach, mixed lettuces or a bun.
