Appetizers for March Madness or Academy Awards Night: Low-Fat Beef Nachos

Appetizers are on the rise this month with  basketball’s March Madness and the Academy Awards. If you’re looking to be “good” and not overdo it, this recipe is only 9 grams of fat per serving. Weeknight Favorite: Low Calorie, Low-Fat Awesome Tasting Greek-Style Meatloaf

Now that Thanksgiving is over, I thought you might want to get back to some lighter weeknight fare. This meatloaf is amazing, and only 142 calories and 4 grams of fat per serving. I developed it for Laura’s Lean Beef Company, and it’s a hit. If you don’t like meatloaf, but you like feta cheese, Greek seasonings and herbs, you will love this dish. This recipe makes two meat loaves, so you can freeze one or give one to a friend. I gave my extra to my friend tennis friend, Heidi. She told me that she didn’t really like beef in recipes. When she tried it, she said that I changed her entire mind-set. When you make this recipe, you will see what I mean.

Low Carb and Delicious: Mongolian Flank Steak

I used to love Mongolian Beef when I was kid when my parents used to take me to our favorite Chinese restaurant. I haven’t had it in a while, so I tried to replicate the dish with flank steak and make it as low-carb and low-fat as possible. I served mine with broccoli and had some rice for the kids, and everyone was happy. Dinner Under 30 Minutes or Football Game Day Delight: Pizza Romano

I love to serve Pizza Romano for a quick weeknight dinner or even for weekend football game fare. There’s some great SEC football games this Thursday night and this weekend, so I thought I would offer up something that’s truly simple, low-fat and delicious. I absolutely love sliders which are mini bite-size hamburgers. They are perfect for appetizers, main dishes and especially the kids. I developed these California Sliders for Laura’s Lean Beef. They are a cinch to prepare and are so delicious topped with this homemade guacamole.
