Holiday Breakfast Cake

Holiday Breakfast Cake

I am a huge coffee cake fan, so I decide to try this Holiday Breakfast Cake recipe for my husband and the kids. This is a great recipe for Christmas morning, holiday gift, a brunch, a shower, dessert, or even a special snack to last all weekend. For dessert, you may want to add a simple icing, but it’s wonderful without it too! Serve at room temperature or warm beforehand. My favorite way to enjoy it is with a cup of coffee or for an afternoon snack.

No-Bake Spiced Cheesecake Bars

No-Bake Spiced Cheesecake Bars

Spiced to perfection, I am so excited to share this easy-to-make, No-Bake Spiced Cheesecake Bar recipe. Combine fresh orange zest with the delicious crunch of a Coconut Chia Granola crust in these cheesecake bars made with Nature’s Path Chia Plus™ Coconut Chia Granola. It’s my latest granola crush with 5 grams of protein and 6 grams of fiber per serving with the addition of the superfood, chia seeds! It works fabulous in the curst of this bar recipe! Add a little more zest to the top if you’re in love with the burst of citrus flavor in these bars (I am). This is what I will be making this week for some holiday parties and get togethers. I made this for some friends, and they loved them! Enjoy for holiday gifts, Christmas or Hanukkah dessert. Here’s the nutrition information so serve your guests and friends a healthier holiday treat.

Expresso Fudge

Espresso Fudge

I hope everyone had a fabulous Thanksgiving holiday! I did! I completed a huge amount of holiday shopping (I am so thrilled, and we had amazing family time!) Now it’s time to get back to the grind and think about work and kids (and more holiday organization). I made this recipe today for Expresso Fudge form the Cooking Channel Stars and mixology duo, Alie Ward & Georgia Hardstark. I will be making this homemade fudge recipe for teacher gifts and holiday get-togethers. This recipe is made with NESCAFÉ Dolce Gusto Espresso Intenso pods which adds to it’s great coffee flavor.

Rocky Road Fudge and Cookbook Giveaway

When I heard about Abigail Johnson Dodge’s new book “Mini Treats & Hand-Held Sweets”, I couldn’t wait to get my hands on a copy. Abigail is a widely respected baker, food writer, contributing editor to Fine Cooking Magazine and more (I love her!). Her new book features 100 mouth watering desserts designed for home bakers of every level including easy to serve, last minute treats, party ideas, kids snack recipes, gluten free, non-dairy, vegan, egg-less and low-fat options. I am so excited to share her book and this awesome recipe for Rocky Road Fudge.

Abby says, “This fun little recipe is meant to inspire your whimsical, creative side. As with all of my recipes, I encourage you to add your own twists and to experiment with your own favorite flavors. The add-in possibilities for this easy-to-make fudge are practically endless, so switch in whatever you have in the pantry—even gummy worms would work! The only thing I wouldn’t take out would be the marshmallows—they’re too iconic to eliminate, but that’s just this baker’s opinion.”

For a chance to win a copy of this book leave me a comment and tell me what your favorite hand-held sweet is. Winner will be drawn on Saturday, October 13 at 8 a.m. CST.

Lightened Up Spiced-Sugary Pecans

Every December I try to find new ways to make spiced nuts. They are the perfect snack during the holidays (that my kids like too), and they make wonderful homemade holiday gifts. My friend, Caroline, gave passed me a version of this recipe earlier this summer when I was working on a recipe development project for a client. What I love about this newly created recipe for Spiced and Sugary Nuts is that there is no butter or oil needed. The pecans are tossed in the egg and water mixture and then drained. Next, you sprinkle with the sugar mixture. I have tried this recipe using cayenne and smoked paprika, and both are wonderful.

Chipotle Spiced Peanuts

Since it’s another big football weekend ahead, and I am entertaining for the Alabama/LSU game, I thought I would try a new peanut snack recipe. I’m hooked on chipotle seasoning, and this simple Chipotle Spiced Peanuts is a winning recipe. It also makes a great holiday food gift idea, and it’s under 30 minutes to prepare. Be sure to start with dry, unsalted peanuts. Have a great weekend everyone! Alison
