Halibut with Mango and Goat Cheese

Grilling in the summer is the norm at my house. Lately, I have really been trying to get my kids to eat more fish. This Halibut with Mango and Goat Cheese recipe is one of my newest favorite creations that they really liked (can you say no leftovers?).  The combination of maple syrup and Dijon mustard flavors the fish to perfection, and it goes great with the sweet and savory mango topping made with fresh mangos, parsley, lime juice and goat cheese. This makes a great weekend night family dinner or weekend idea for entertaining with friends. Serve with a tossed salad and grilled asparagus or grilled okra for a healthy summery meal in under 35 minutes.

Easy Grilling: Jamaican Spiced Flank Steak

I do a lot of grilling in the summer, but honestly, I am grilling year-round. Every year, I work on so many grilling recipe projects for food clients, magazines and cookbooks, and my kids love almost anything that is cooked on the grill. Flank steak is always on the top of my list, and I love this Jamaican Flank Steak recipe. The marinade is really fabulous, made with orange juice, lime juice, fresh ginger, brown sugar, pepper and cinnamon. One of my friends tried it, and she told me she only cooks flank steak this way now. Serve this with a tossed salad, fresh fruit or grilled asparagus, and dinner is fresh, healthy and simple.

Turkey Burgers Featuring Belle Chevre Goat Cheese

Easy Grilled Italian Romaine Salad

Perfect for a busy weeknight or Sunday afternoon, this Easy Grilled Romaine Salad is so flavorful. Use a store-bought balsamic vinaigrette to marinate the vegetables, and then grill them to bring out their flavor even more. Gorgonzola tastes great sprinkled on top, but you may substitute feta, Parmesan or goat cheese if you wish. Feel free to add grilled chicken, steak or shrimp for a main-dish salad. Serve with some crusty bread and olive oil, and dinner is ready.

Zucchini-Wrapped Scallops

I am having such a great summer so far. Lots of travel, work, fun and family time… and more to come. This gives me a huge smile. In celebration, I thought I would share this perfect recipe for summer. These Zucchini-Wrapped Scallops are a fun twist on a great appetizer or main dish. These are simple to prepare: under 30 minutes from start to finish. They are so light, healthy and fresh, so what more can I say? I made these recently for a party, and everyone went nuts. Brie-Mushroom Burgers

For Memorial Day weekend, I want to share one of my favorite burgers: Brie-Mushroom Burger. The first time I made this, my kids were a little leery of the Brie and mushrooms. When they tried it, they were hooked. This is a great way to get your children to eat mushrooms and try new ingredients.
